蠔意濃情 (菠菜白汁焗蠔)

以後不用上餐廳也可嚐到鮮製的焗蠔
其實不太難,大家不妨試試
Ingredient and Portion
生蠔 8隻
菠菜 40克

白汁:
牛油 30克
麵粉 40克
鮮奶 80毫升
忌廉 20毫升
Seasoning
胡椒粉 適量
鹽 適量
橄欖油/牛油 適量
Method
1.以生粉清洗蠔,放一旁瀝乾
2.將菠菜切成小粒狀,以橄欖油或牛油炒熟待用
3.用慢火,下牛油待溶至液體狀
4.下麵粉,每次一少撮份量,拌至沒粉狀,直至用完麵粉為止
5.分數次慢慢倒入鮮奶,一邊倒一邊攪拌
6.下忌廉,以胡椒粉,鹽調味
7.倒入菠菜拌勻,菠菜白汁即成
8.將白汁淋在生蠔上,放入焗爐焗至金黃即可
Tips
1.放入焗爐前要確保蠔身已乾,沒帶水份,可用廚房紙巾吸走多餘水份
2.若鮮奶每次下太多或太急,會形成小粉粒
3.用忌廉焗蠔更香更鮮甜,不用忌廉用鮮奶代替也可
4.沒大焗爐也不成問題,本人也是以小多士爐焗成的
