南瓜味甘性温有補中益氣,潤肺化痰止痛解毒殺蟲的功效,有利治療哮喘,燒傷燙傷等,肝炎,肝硬化,腎炎,白內障,高血脂症。
心內美汁液存在色素稱為花青素,是一種水溶性色素,含熱量較少纖維素較多,吃後易產生飽足感,有助減肥,常吃可降血脂,軟化血管,穩定血壓,預防冠心病,動脈硬化,膽石等疾病。
薯仔含大量鉀質,有助維持正常血壓,心臟功能,幫助調節水分平衡及復原功能,去除關節間酸類,減輕酸痛感覺,從而舒緩風濕及關節疾狀,幫助排毒。
洋蔥含有30種能夠克制致癌物的化合物及致癌物質,如亞硝安與黃麴毒素,另其所含蒜素則可增強體內免疫系統運作,幫助抗癌。

珍珠筍 5-6條
洋蔥 1/2個
原隻南瓜 1個
Seasoning
咖哩粉 2.5湯匙
鹽 1茶匙
鮮奶 1/2杯
椰汁 1/2杯
糖 1.5茶匙
Method
1. 薯仔、南瓜、心內美去皮洗乾淨,切成角型。
2. 原隻南瓜將頂開蓋,核和肉略為挖出
3. 珍珠筍洗淨,洋蔥洗淨切成角型
4. 南瓜、薯仔、心內美、洋蔥和珍珠筍走油盛起
5. 白鑊爆香咖哩粉再下油略炒,然後下步驟4的材料煮片刻,下調味煮熟,倒下獻汁盛在南瓜內
