用新鮮海鮮加上韓式辣醬,泡製鮮甜火辣海鮮湯。

Ingredient and Portion
花甲 1.5斤
細花蟹 4-5隻
海蝦 1斤
急凍大帶子 6-8粒
紫葱 5-6粒
粉絲 小量
泡菜 1小罐
水 3000ml
Seasoning
韓式辣醬 5-6湯匙
雞粉 2茶匙
Method
1. 將花甲浸水2小時令其吐沙
2. 將粉絲浸半小時
3. 煲滾水後,放下花甲煲2分鐘,待其開口後撈起花甲,水留下作湯底
4. 爆香紫葱,加入韓式辣醬炒香備用
5. 將蝦、蟹、帶子、粉絲、泡菜及爆香辣醬,放入之前步驟3留下的湯底大火煲15分鐘
6. 將花甲及雞粉放入湯大火煲1分鐘
7. 完成
Tips
1. 花甲一定要先灼好撈起備用,不能同其它海鮮一齊煮,否則會太長時間,花甲會靱。
2. 要用灼完花甲的滾水做湯底,因為花甲開口後,內部的海水會令湯底更鮮甜。
3. 韓式辣醬一定要爆香才加入湯底。
4. 如喜歡,可在步驟6加入豆腐。
