Wash chicken and wipe dry. cut into smaller pieces.
Combine all ingredients for marinade and mix well. Mix well with chicken pieces as well as ginger and scallions. Let marinade for 30 minutes.
Heat oil in a clay pot, put chicken and parsley as well. Pour in stock, cover and bring to the boil. Then turn to low heat and simmer over low heat for 25-30 minutes until done and serve.
