路經見店內都多人食,又唔知食乜好,就入去試下,由於太多人,需要搭枱先有位。小店主打刀削麵,但我想食米線,於是order左上海雲吞米線🍜上菜速度幾快,食物熱度充足,但餐廳環境狹窄,坐得唔太舒服,特別係張枱既枱腳頂住😓湯底偏咸,食完都幾口渴,相信落左唔少味精,雲吞五大粒,外皮略厚,咬落有D位太厚粉好實,其中一隻可能煮太耐外皮爛左,雲吞皮口感有待改善😅菜肉餡料調味適中,不過不失米線量偏多,口感軟硬適中。整體都算抵食,但餸同湯底調味仲有好大進步空間。

聽過刀削麵但冇食過就諗住去試下😎呢到其實仲有湯麵/麻辣/菜飯/冷拌/熱拌。如果唔食刀削麵仲可以免費轉拉麵/米線,我地兩個就嗌左熱伴。拌麵係配擔擔醬,有得揀走醬/多醬/少醬/分上,我自己就揀左多醬,有少少辣但可接受😋佢麵都有得揀淋啲爽啲,我初頭以為呢啲麵係一早整定,直到佢係我面前整😳肥牛熱拌好有驚喜,其實食落有啲似年糕嘅texture, 而且份量超大(女仔真係唔好再額外嗌小食)😂佢啲肥牛仲要勁多勁大塊,肉多油少👍🏻仲有佢地個凍豆漿都幾好飲,冇咩渣又唔甜😋

久不久就想吃刀削麵,銅鑼灣這一間既正宗又便宜,是會重訪的麵館。今天點了麻辣牛筋腩湯麵($62)加上海雲吞(+$10),還有豬軟骨熱拌麵($65),當然也不能錯過麻辣手撕雞($48)。刀削麵是現場削的,那種刀工俐落,看著就覺得專業。麵條滑而彈牙,每一口都有嚼勁,湯頭清甜,牛筋腩入味,麵餸分開,麻辣醬放面,自己可調節辣度。上海雲吞皮薄,整碗吃起來非常舒服。熱拌麵也不遜色,豬軟骨燉得極為軟糯,輕輕一咬就化開,拌麵的醬料濃郁得來不膩,辣度剛好,吃完感覺很滿足。至於麻辣手撕雞,肉質鮮嫩,辣味絲絲入扣,還帶點微酸的口感,非常開胃。

喜歡吃人手做的刀削麵,所以來這店點了兩個熱拌刀削麵吃,選了配菜為猪頸肉、牛根腩、猪軟骨、鷄腎。從廚師麵團手工削出來的刀削麵,保証是手做,不是機械做的,這才算得上是刀削麵,麵條食落有韌性和彈牙,配上麻醬,中式炸醬一齊食,味道酸酸辣辣外,還有芝麻香味,好味。猪頸肉是先炸了,才放在麵上,所以外皮香脆,好特別。猪軟骨肉質軟腍,軟骨脆口。鷄腎爽脆,牛腩也好味。食物和餸菜都好味,份量充足,就算胃口大的人也會吃飽。
