A very cozy and tight sushi-ya with only 11 seats! I already knew the food had to be good due to the size of this restaurant and further confirmed my point with their array of fresh ingredients on display.

刺身壽司盛盒 $148
Lunch set comes with miso soup and salad. Salad is the basic Japanese lettuce and corn salad with sesame sauce. Simple, delicious and appetizing. I like how it is very crisp and refreshing, not room temperature. The miso soup is served very hot. Each sip is soothing and you can tell they use high quality dashi due to the depth and it does not make you thirsty.
Everything is extremely fresh!
刺身
赤蝦 Red Shrimp: the flesh is very plump and bouncy, the head is full of brains and 膏. You can taste the freshness and it’s not fishy at all! It kinda reminds me of oysters.
三文魚 Salmon: 2 thick pieces is given and each is equally fatty and delicious. The pieces has a pleasant bite to it but melts inside your mouth. A bit too fatty so pairing with soy sauce and wasabi is a must!
油甘魚 Yellowtail: 2 thick pieces given. Each is extremely soft and fatty, you can even pull the muscle fibers apart with your chopstick! Hence, it easily melts in your mouth. I ate one piece by itself and one with rice. Eating it with rice makes it more balanced and delicious due to the high fat content.
壽司
The sushi rice is not cold but perfectly room temperature and a bit warm, thus it is fluffy and soft. Not seasoned except with some vinegar and sugar. They would ask if you would like wasabi in the sushi and you can have it even if you don’t like wasabi as there is not a lot given and I needed extra anyways. Fyi, like many sushi-ya in HK, they do not use fresh wasabi due to its elusiveness and cost.
赤身 Akami Tuna: The leanest among all tuna but my personal favorite due to the unique flavor it has which is the epitome of fish. Here, the tuna does snap when you bite into it as some less fresh places may, it has a great bite to it but still soft. It doesn’t melt in your mouth but that’s expected.
左口魚邊 Flounder Fin: Perhaps it is the fin but the muscle fibers are very tough and long here, they should try slicing against the grain next time. But since this was seared, the oil rendered from it is so aromatic and delicious as it seeps into the rice.
真鯛 Red Sea Bream: A typical fish with a pleasant (not mild nor intense) fish flavor and soft, firm texture.
魴鉘 Grey Gurnard: This particular piece was very tough and firm. Not like the flounder where the fibers are too long but just the fish in general. Perhaps it was a tendon piece. But still edible with a mild fish flavor.
帶子 Scallop: So soft! And plush(?), weird word for sushi but it was very plush and plump. The scallop isn’t the thickest piece but it still tastes like a thick piece would.

💬 Overall, lovely meal here that reminds me of the sushi-ya in the alleys of Japan. Highly recommend to nearby workers for a quick meal! The price is quite high given the portion but the quality makes up for it.
