沒想過對我來說全晚的highlight是甜品!!
我絕對不是一個甜品控, 但這個Brownie真的超.好.吃!
Brownie上面也了一層溶了的朱古力醬, 
好像在吃"心太軟", 超棒~~
加上烤脆了的綿花糖, 天啊! 絕配!
我朋友吃不下, 我又吃了兩個...
也是同一句.. 吃完再減吧~

$250個大洋, 不用加一, 可以任食炸雞兼任飲啤酒! 還送了一人一Shot Whiskey! 再加上前菜和甜點, 實在物超所價!

輪到主角炸雞登場!Steak Frites只採用來自澳洲Lilydale雞腿肉,自由放養的有機雞肉質鮮嫩多汁。原來秘訣在於大廚先將雞件放進buttermilk中醃過夜,再用鴨油炸熟後放涼,然後再翻炸至外皮金黃鬆脆給客人新鮮享用。阿P不負眾望,吃了5大件炸雞,而我只吃了兩件,真失禮!

Their American southern fried chickens are free-range and organic, marinated overnight in their secretly spiced buttermilk sauce to keep it extremely moist and succulent. It is then double fried in duck fat to give an extra-crunchy coating that is seasoned with salt and a sprig of thyme.
On top of that, the option is not limited to just fried chicken. We had some decadent macaroni salad, crunchy coleslaw and buttermilk biscuits to complete the hearty and indulging menu.

That's the way they roll at the Butchers Club, to say they are fanatical about beef products might just be underselling the team's devotion to bringing top quality meat to Hong Kong.

The Butchers Club are very well known for their burgers and for a while there, I was pretty darn addicted to their fat and juicy hamburgers (see post here). While their burgers are arguably the best in town, I was keen to find out just how devoted to the art-of-the-cow the Butchers Club were, and visiting their Steak Frites joint on Staunton Street seemed like the best way to find out.

I'd walked past the entrance to Steak Frites countless times on the way to work each morning, so was well acquainted with the entrance actually being around the corner in Aberdeen Street. Walking up the stairs into the dining room was an interesting experience, with decor that included exposed bricks and a rustic feel that was enhanced by the slight red glow of the numerous hanging lights. The space was a little smaller and more intimate than I was expecting, the tables quite close together. Our table afforded us a clear view of the kitchen and fridge stocked full with the specially acquired Australian and US beef.

Placemats at our tabled doubled as menus and we contemplated a decent range of choices that included grain fed 120+ Western Australian beef aged for 40 days, USDA Angus prime aged for 90 days and the very special Ranger's Valley 'Black Onyx' Angus grain fed for 300+ days and aged for 30 days. Of course there was a supporting cast of appetisers and platters to share and a small number of desserts, but the menu left no doubt that the focus of the Butchers Club was the steak.

We kicked off our meal with a dozen of the Scottish oysters, thoughtfully halved so that the girl and I each had six fat and plum oysters shucked and ready for devouring. Of course, jealously running my eye over the oysters, I noticed that SC's were a little larger and a little more plump than my half dozen. The super fresh oysters had quite a high salinity levels and were lovely and salty, you could really taste the sea in every bite. Accompanying the oysters was a sharp little vinaigrette, which paired wonderfully with the salty oysters and the girl even added a little tabasco to provide a little kick.

Next up was another little share plate of Ranger Valley wagyu carpaccio, which was served with a little arugula, parmesan and lemon olive oil. The marble content was on display, with the white fatty deposits streaking through the bright red of the incredibly tender meat. Lightly grilled on the outer edges, the carpaccio was a lot thicker than I've been used to, but the superior quality of the meat allowed the thicker cut to really shine. The healthy amount of seasoning sprinkled over the meat, along with the slight peppery flavour of the olive oil ensured that the carpaccio was one of the better examples we'd come across.

Part of the gig at the Butchers Club is to provide a salad before the main show started and we were given the option of a honey mustard dressing or a blue cheese sauce on our lettuce wedge. Given my experience at Byron Hamburger's in the UK (see post here), I didn't hesitate to ask for the blue cheese sauce while the girl went with the honey mustard. In case you've not had a lettuce wedge salad, you're missing out, they are superb. A quarter of lettuce, drizzled in a sauce then showered with chunks of crisply bacon seems like a simple salad, but boy are they superb. I'd have loved to have seen a lot more blue cheese sauce on my lettuce, about half way through, I'd run out and it lost a little of it's impact.

We both kept the main simple, ordering the 300 gram Rangers Valley centre cut tenderloin, medium rare for myself with the girl committing a little bit of heresy and going for a medium. Our huge steaks were presented on the expected wooden board with a handful of the Butchers Club's famous duck fat fries. Before touching my steak, I jumped straight those wonderful thick cut fries with the golden and mostly crispy exterior and a soft and fluffy interior. But I could only ignore the call of my beef for so long, and before I knew it my knife was gliding through the tender cut of beef like a hot knife through butter. My steak was well cooked, seasoned to perfection and most importantly, had been rested 'juussst right'.

Tenderloin is not the strongest flavoured part of a cow, so they need to be cooked perfectly to be enjoyable and the Butchers Club clearly know a thing or two about cooking beef. The steak was superb.

We'd done a silly thing though... You remember the Simpson's episode where Homer fills up on bread? Well, there were some tasty baguette slices provided with the smoothest and creamiest truffle butter ever on our table, and, well, we almost filled up on the bread! So were completely stuffed trying to finish off the huge steaks!

It stopped us from sampling one of the desserts of offer, but in all honesty, there were no options that enamoured us that much anyway.

The Butchers Club clearly know their way around a cow, in fact, they have many a poster on their walls showing just that. The team have secured the best beef and are well adept at preparing it with love and respect. The meal is a bit of a hike on the traditional 'steak and frites' on offer from likes of 'La Vache' (see post here), both in quality of the produce and the price of the meal, which has the potential to burn a hole in you're wallet.

I very much enjoyed our meal at the Butchers Club and I'm glad I went, but boy, those steaks are expensive, even by Hong Kong standards. It's just a little hard for me to justify regularly visiting Steak Frites by the Butchers Club - I guess I'll just have to satisfy myself with their very beefy burgers!

Porterhouse - 36 oz - 90 Day dry aged USDA Angus Prime Porterhouse & Duck Fat Fries
兩款熟成牛扒,上面是肉眼扒,下面是大丁骨牛扒。熟成牛扒,是靠牛肉內蛋白酶,自行軟化肉質組織,讓牛肉味道變得軟嫩。在0-1度經過30-90天熟成,牛肉自然流失10至15%水分,牛肉味變更濃。成本較貴亦在所難免,但我吃過這兩款,都真的跟一般的牛扒有差別。肉真的比較濃郁,牛扒的質感亦比較嫩,真的值得一吃。更不能錯過他們的鴨油薯角,非常滋味可口。

小弟尤其喜歡那份手撕豬肉,不但燜得軟腍,而且充滿了燒烤醬的香味,而豬肋骨也煮得軟腍,不用花勁便可扯開了,可是在調味上卻很特別,帶點中式孜然的味道,實在有驚喜。

來得這兒豈能錯過品嚐風乾牛扒的機會,先是風乾了90日的USDA Angus Prime Porterhouse,質感結實一點,味道也會濃厚一點,不過由於骨內外的部位不同所以出來的感覺也不同,平常會喜歡西冷的一邊多一些,可是今次則喜愛牛柳部份,肉香更濃,而且軟滑一些,不過其實卻是各有各好的。

另一份是風乾了45日的ribeye,感覺上當然還是porterhouse好些,這個在肉味上是有些輸蝕,但在肉質上,會軟腍一些。

到最後的當然是大量的甜品,這個盤內共有幾款,分別是New York
Cheesecake, Chocolate Cake, Key Lime Pie and Carrot Cake. 每一款都是美式的味道,很濃厚,甜度亦高的,不過最喜歡的始終是Carrot Cake。

這個地方絕對是一個食肉獸的天堂,無論牛扒及燒烤拼盤都是啖啖肉,一邊喝酒,一邊大啖大啖地吃,實在暢快。

感覺蠻親切的!

這份便是每星期二晚BBQ night的BBQ Platter,數款食物之中,最喜歡的便是薯條,用來沾那bbq醬,實在很棒;而豬肋骨的肉質亦嫩,那醬汁很惹味呢;另外pulled pork也不錯,用來夾麵包一流呢。

除了吃,喜歡喝的朋友也可以加$150享用free flow Peroni Beer或Jack Daniels。

Porterhouse HK$1650 for 2

除了享用了BBQ Platter,還點了一份porterhouse,porterhouse還包了一份用鴨油炸的薯角,薯角是超棒的,非吃不可。這份是90天熟成的 USDA Angus Prime Porterhouse,經過熟成的牛一般來說味道都會比較濃郁的,看著大廚把這份porterhouse放在火上燒,所以外層會特別的香呢。

最後,又怎少得甜點呢,四款分別是New York Cheesecake, Chocolate Cake, Key Lime Pie和Carrot Cake,四款蛋糕的質素還不錯,個人覺得吃了這廚多肉後,來一份檸批是很好的,清新的檸香,減了不少膩感呢。

I wouldn't say I am a total meat addict because I do like my veggies and I love vegetarian cuisines too. But when it comes to steak, even when my schedule was like super packed for the day, I would still try to squeeze time for it just to indulge myself as a motivation to keep working (my A off).Having heard from my colleague Shirley of how amazing the dry-aged steaks are in Steak Frites, I have finally come paid a visit with other foodies last week, and luckily we have tried their newly launche

On the BBQ Platter, there were Dingley Dell Pulled Pork, Grilled Back Ribs, Chicken Wings Grilled Corn, Coleslaw, White Bread and Chicken Salt Fries. I must say it's pretty good value for $250. My favourite on the platter was the Dungley Dell Pulled Pork. It was nice and moist, with right amount of pork fat sticking with it. The ribs was a tad dry though. Chicken Wings were fair, like them with the blue cheese as they remind me of buffalo wings!

The white bread was served with pure beef fat cream sprinkled on top some salt and pepper. The bread was nice and chewy, while the beef fat was really fluffy and the richness from fat lingered in the mouth forever. I had to be one of the best table bread I have had lately!!

We shared a 90 days dry-aged T-Bone Steak ($850) and 45 days dry-aged bone-in rib eye ($550). Had a slice of the strip-loin and the flavour of the beef was very intense and rich. The texture was a bit chewier than usual since there was less moisture in it, but as you bite into it, the flavour of beef released was really intense.

Most of my friends prefer the T-Bone, though I like the rye eye more. I found the later much more tender, yet with a rich flavour too and the edges were beautifully crispy. Loved the char-aroma as well. What makes it even better? Add a slop of beef fat cream and slurp it in!

The Duck Fat shouldn't be missed neither. The fries was so mushy, and duck fat does help bring out the natural flavour of the potatoes. Though comparing this to the roasties we make in UK was duck fat for our christmas dinner or even sunday roast, I prefer the later as I want more of a crunchy coating with it.

Talking about the dessert, we have ordered Carrot Cake($70), NY Cheesecake($70), Chocolate Cheesecake ($80) and Key Lime Pie ($70), one of each to share. Thank god we only ordered one each because they are GIGANTIC!

Carrot cake was not overly sweetened, it was very buttery instead. The butter cream in between the layers were smooth and silky, though I would prefer whipped cream cheese instead if you ask me.

NY Cheesecake was wonderfully presented as well. The baked cheese was rich and not at all crumbly, and I love the hint of lemon flavour from the zest and juice that have totally helped to brighten up the overall sensation of the cake. 

Chocolate Cheesecake is the one to be proudly introduced. The Chocolate flavour was so pronounced, as if you are eating a thick ganache mixing with a bit of saltiness from the cheese. It was really indulging but make sure it is shared because it can get a bit heavy after few bites.

I would recommand eating the key lime pie last. Don't get the wrong idea that it was not as good as the others though! This lime pie is another must-eat because it was so refreshing with the curd and the crunchy biscuit base. It would make a great dessert after a heavy, greasy dinner for definite!

To be honest, spotlights are still on the steak eventhough there was the BBQ platter as well. The ribs were not as juicy as expected like I said. Though it would make a nice choice as something else other than beef to share among friends!

這是一人前份量。

大堆頭得令人難以下手,最後,我情定帶有強勁的煙燻,入口鬆化的手撕豬肉,成為心目中的No 1。烤肋骨的蜜香與煙燻紛陳,還有雞翼的進擊,實在不能不吃一點Colesaw來中和一下。燒粟米是我的囊中物,畢竟我是一頭粟米怪。

要是胃口不大,一個拼盤絕對吃得你飽,否則,餐前可以先來一個藍芝士蕃茄沙律,原隻生菜開邊上,再淋上濃厚的藍芝士汁,與煙肉粒。

Porterhouse for 2 ($1650)。經過90日熟成的36安士USDA Angus Prime Porterhouse,一次過可以吃到Short-loin和Tenderloin兩個部分,Tenderloin肉味濃郁,最合我的胃口。在牛扒後面遠處的是招牌鴨油炸薯條,聽起來好像很油膩,這可是絕對不能錯過的美食,粗身薯條外脆內軟,薯味濃郁,滿滿的一大碗,讓人吃完好滿足。

最後的芝士拼盤和甜品拼盤相當少不了,有New York Cheesecake、Chocolate Cake、Key Lime Pie和Carrot Cake,食友們一致覺得Carrot Cake甚有水準!

慢燻BBQ拼盤賣$250真是超值,怎麼說也是中環SOHO區啊,份量足,男生都不怕不夠飽,不過記得只在周二才有賣,想吃就記得要周二來啦~

星期二是「Steak Frites」的 BBQ 之夜,當然要來一道 BBQ Platter。內容豐富極了,包含了 Dingley Dell Pulled Pork, Grilled Back Ribs & Chicken Wings with Spicy Housemade Sauce, Grilled Corn, Coleslaw 和 Chicken Salt Fries。雖然大部份是肉類,但多樣化的選擇和獨特的醬汁,吃得很舒服,也不會感到膩意!

最喜歡 Chicken Salt Fries 的鹹香脆軟兼備、Grilled Back Ribs & Chicken Wings 帶小辣的秘製醬汁,還有Grilled Corn 的爽甜多汁,將我內在的食肉潛能狠狠地激發出來,更自信可自行清掉一份,減肥留待明天吧!

每位加 $150 可享無限添飲的 Peroni beer 和 Jack Daniels,要飲飽食醉絕無難度!

乾式熟成技術是透過衡溫和衡濕的保存環境,讓牛肉自身的蛋白烤素提昇肉質的嫩度、風味和肉汁。

首先是 30oz 45 Day Dry Aged Bone in Rib Eye with Duck Fat Fries,肉眼邊位盡是濃黑的色澤,入口香脆、散發焦香;而粉紅的肉心,卻來得很細嫩,兩者形成強烈的對比!

Duck Fat Fries 是以上兩款牛扒的伴菜,也是當晚最邪惡的食物。

經過三次鴨油油炸的 Duck Fat Fries,手感和口感也毫不油膩,表層細薄帶點脆香、內層卻特別的粉軟,鴨油的酥香卻不是太明顯。其實鴨油的膽固醇含量在云云的動物脂肪中是最低的,所以久不久才享用一次,便盡情豁出去吧!

雖然只是幾件蛋糕,怎麼造型也來得特別的吸引,幸好人多好辦事!

蛋糕包含了 New York Cheesecake,Chocolate Cake,Key Lime Pie and Carriot Pie 各一件,但千萬不要看輕這「一」的量詞,在飽嚐肉類後,要解決它們,我們得加把勁。當中 Key Lime Pie 酸酸的味道是餐後的消滯好伙伴,而 Carriot Pie 的甜度、Chocolate Cake 濃厚的朱古力,我只能輕嚐,反而 New York Cheesecake 沒預期的膩意,可再來一點!

最後是 Fromage by Xavier 的 Cheese Board,除了三款精選芝士,亦有 Chutney 乾果, Crackerthins 和提子。三款精選芝士味道不算濃厚,但卻很喜歡 Crackerthins 的鹹香和脆感,配上藍芝士後,味道真的很不錯。看平日我早已罷工的芝士環節,那一刻食意仍在,真的不可思議!

「The Butchers Club」裡,英文字母 B,肯定是代表 Butchers,而我卻喜歡星期二晚獨有的 B for BBQ,除可享用乾式熟成的牛扒外,還可以有著 BBQ 的放縱!

每一款都非常美味,尤其喜愛手撕豬肉和薯條。我試著將柔嫩多汁的手撕豬肉和coleslaw夾在麵包中製成三文治,麵包沾滿肉汁,滋味得很,還得到帥哥廚師的讚賞。*(^o^)/*

來到Butchers Club,怎麼可以不嘗試熟成牛扒?我坐的位置面對廚房,可以欣賞到廚師如何料理好肉。90 Day Dry-Aged USDA Angus Prime Porterhouse T-Bone(32oz HK$1650)with Duck Fat Wedges, Béarnaise, Peppercorn Sauce, or Horseradish Cream  32安士的 T骨牛扒塊頭巨大,右邊是細嫩的菲力,左邊是富有肉香嚼勁的西冷。我挑了一件帶脂肪的 菲力角肉,看起來是七分熟,但依然軟淋帶汁,沾一點Béarnaise,脂香更濃。

40 Days Dry-Aged Bone-in Rib Eye  40天熟成帶骨肉眼扒,焦香的薄邊包着 粉紅嫩肉,水份降低後令肌肉紋理清晰可見,入口卻細膩不乾柴。

附送的鴨油薯角經過三重油炸,外面酥脆裏面嫩嫩的吸飽了鴨油,銷魂的香味,令人忍不住一條接一條塞入口中,邪惡得過份!(為了健康着想,我上網查了一下資料,發現鴨油的多元不飽和脂肪Polyunsaturated fat 比橄欖油更高,而且比起我們做甜品常用的牛油健康得多,各位對鴨油薯條又愛又怕的朋友大可放心食用)
