油泡鲜越南蟹钳配鹅肝 (每位) Stir-fried Vietnamese crab claw with pan-fried perigord foie gras and spicy rice wine sauce (per person)$280 黑松露菌焗美国带子鹅肝 (每位) Baked giant u.s. scallop with rice wine marinated perigord foie gras and black truffle (per person)$168 俄罗斯鱼子鹅肝拌炸凤尾虾 (每位) Deep-fried prawn and Russian Oscietra caviar with pan-fried perigord foie gras and orange paste (per person) $168 盐烧美国生蚝伴鹅肝(每位) Wok-fried Virginia oyster with perigord foie gras and star anis (per person) $138 鹅肝鲜虾饺(每位) Steamed Thailand shrimp and perigord foie gras dumpling (per person) $38 The way they handled the foie gras for each and every one of these dishes were similar, they steam or pan fry it without adding much flavoring to it. Therefore the foie gras would taste rather plain and tough in texture, totally different style from what we use to have at French or Japanese cuisines. It was rather disappointing during this meal for the both of us because we were expecting to have fat and oily pan seared foie gras dishes instead of steamed ones! Also, the foie gras in every dish did not stand out at all, the name of the menu should rather be “Seafood menu” instead since the other ingredients such as shrimp, scallop, caviar, oyster were all even more delicious than the foie gras itself.
Even though the flavor of each dish was above average, but the main selling point of this menu was the foie gras therefore I’d rate it according to our satisfaction of how the foie gras was prepared and how it complimented the rest of the ingredients, which in this case failed to surprise us, not even one single dish we ordered were up to our expectations. Maybe Chinese food really isn’t our favorite cuisine after all.
