4 of us for dinner. Decided to try this outlet, named after the spa at the hotel, supposedly healthy and sustainable Mediterranean cuisine. Had low expectations, given experience at Salis.Servers in spa-like uniform, probably to give out a zen-like feel, but music was loud (had to strain to hear server) and wooden designer chairs were not so comfortable.Wine list was ok, wanted to go for Sancerre (which they ran out) so ended up with 2 bottles of Chablis. Upon server’s recommendation, went for 2 set menus and added 2 servings each of the restaurant’s signatures (both not on set menu): octopus and the Glacier 51 toothfish.
Focaccia came with smoked anchovies.
Next came the artichokes. Server came and sprinkled oregano over them.
Salad with eggplant on pita bread with cauliflower sauce.
Grilled octopus with eggplant. I was expecting more crispness but they liked the firm but not too chewy texture.
Raw amberjack with sea urchin. Their rich, buttery flavors balanced well with the citrus notes of the lime pepper dressing and green asparagus.
Couscous in seafood broth, with mussel, clam, prawn and a piece of rock fish. The
rock fish has a nutty, sweet flavor, which went well with the broth, which was a bit spicy.
Third fish of the nite. The glacier 51 with tomato crust. The toothfish tasted similar but better than cod. Its high fat content was well balanced by the minty sauce and acidity of the tomatoes.
Fourth and last fish of the nite: the maigre de ligne (caught at sea). Topped with raw radicchio (a mildly bitter tasting leafy vegetable). The lean, tender and moist flesh went well with the garum (fermented fish sauce).
As dessert: lemon sorbet with all kinds of berries in strawberry sauce.
Mille feuille with salted caramel filling with a slight hint of lavender. Apricot sorbet. Interesting texture of mille feuille, reminded us of tiny waffle.
In summary: interesting fish tasting experience. Above expectations. Worth trying if you like seafood.
