Just to reply the last comment about wasabi. First, wasabi should not add to the 豉油. It is totally wrong and a very 'Hong Kong' style. Also, the wasabi this shop is using is from the real plant "山葵", it is not that "tube wasabi", and is much much more expensive. Only the high class sushi shop will use it.
