Came here the 1st time on Taxi Driver's night recommendation. He kept repeating 细龟, 细龟 or 肥仔文, 肥仔文... Both good for Eat in or Take Away! Although 华轩美食 is also in my Macau Guide Book, I wasn't attracted by its book entry initially. Its not helped by the fact my knowledge about local Macanese food started from ground zero! In the end I finally understood the concept behind this shop: while 华轩美食 is the main shop's name and run by the wifey (龟婆), 细龟 is the name of the male boss perenniall

Slightly above-average quality - good enough for supper! At least the Crullers were still crispy.
全餐面(炒) - SCORE: 4.5 / 5
Although their most popularly recommended dish is the Dry Fried Beef Hor Fun, the 全餐面 is actually the main Signature Dish for 华轩美食! This is wok-fried inside the shop and not by 细龟. It came with quite fresh tasting octopus tentacles, bean sprouts, chicken & beef and just the right amount of seasoning. The ingredients were excellent! The noodles, unlike many modern places, weren't deep-fried in oil until it resembled a crispy cake of noodles - they were actually 'stir-fried' and done really well, even carrying the al dente bite and individually springy - 香喷喷又有镬气又有面味, 宵夜唔食佢对唔住自己! Note: The 1st time I came to here, the 干炒牛河 had already run out quite early and I didn't get to try it. However this signature noodles dish is really worth ordering, perhaps more so than the Hor Fun....?
干炒牛肉河粉 - SCORE: 3.5 / 5
Finally got to try this on an earlier night, a long time after during another visit! This was ordered as a Take-away, but rest assure I ate it straight away for judging correctly as I was scooter-less anyway! I had wanted to re-try the Shrimp Roe noodles and other stuff at 六记 anyway, so just took it to there for 就地正法, assuming they would 只眼开只眼闭!
I was actually slightly disappointed in the Hor Fun's taste and execution. Although it was full of 镬气 and I watched the very difficult squatting posture and the high heat experienced by the chef, and the beef were fried really well indeed, the whole dish was fully saturated with excess oil and it coated my whole intestinal organs for the next 1.5 days. However it was the lack of soy or caramelised soy sauce taste in the 河粉 which made it ordinary, plus the Bean Sprouts were added in way too early during the frying process, by the way the noodles went in they were chewy and shrunk to become stringy.... Although I haven't ordered this dish a lot in Hong Kong, I remember having a much better version inside the Wanchai's Exhibition Centre's Cha Chaan Teng. I also found the more correctly seasoned, more healthier but less 镬气 one at 正斗@跑马地 a bit better but both those cost around double the price! 细龟's beef quality though is the best!

Anyway, I wasn't disappointed. Well may be just a tad. I would highly recommend friends to try this shop and taking into consideration the possible variations in execution! This is a type of shop which earns money the hard way and requires a lot of 辛苦功夫. The 全餐面 for me tasted better than the 干炒牛河 but if I come again, I will definitely order both and perhaps a congee to try!
