虽然吃碗面得人均一百起步,但好汤好面值得一次,全港太少有这样有追求的创作型面馆了,不愧大围总店连年都入选必比登。·首先是汤底的细琢,会用不同的食材去熬高汤,并根据浓稠度选择搭配阳春面或扁面,而不是一味高汤贯穿所有,鲜浓的汤底让你忍不住端起碗来喝个干干净净。·第二是食材的讲究,鲍鱼海参鱼肚蟹肉鸭肝风干火腿……这些一般不会出现在面馆的食材,却是好汤好面菜单上的常客,有的还会标出产地和等级。·第三是源源不断的灵感,虽然就是一碗面,但这里拿出了想让你吃到各地风味的信心和诚意。从川味到日式到佛跳墙,这些天马行空的搭配在其他面馆哪里找啊?!·【海龍皇湯】藍蟹肉/海蝦尾/北海道魷魚/北海道刺身帶子/廣島蠔肉/蝦頭油/皇湯·【棉花雞】日本地雞肉/魚肚/花菇/雲腿絲/高湯·【蕃茄蛋牛】美國頂级牛小排/燉牛舌/煎太陽蛋/蕃茄高湯·海龍皇湯是热烈的鲜,与面条共同被高汤滋养的是海鲜的盛会。棉花鸡是温醇的鲜,吸饱了汤汁的食材最大程度散发着松韧软。·蕃茄蛋牛的汤底我觉得可以再少点油,不过也还是顶配版的番茄牛肉面了,吃面加个煎蛋,总是能让满足感再多几分。·环境和服务都挺不错的。

之前淨係食過大圍分店 今次去到銅鑼灣分店都係叫番棉花雞湯麵湯底濃度岩岩好 唔會太咸 一啖有少少湯配埋個麵 好好食麵既質感都岩岩好 唔太淋唔太硬棉花雞就正常 不過如果多幾舊雞會更好🙈🙈價錢較進取 不過間唔中食都好開心!

夜晚開完會想食啲暖笠笠嘅嘢~等個人舒服啲🥰朋友就建議黎名店坊附近嘅好湯好麵*海旁附近都有啲大風~所以更加期待一陣有靚湯飲呢度嘅湯麵好勁 好多中西合璧嘅配搭😍最後我哋叫咗兩婉👍棉花雞🍜 $103 @日本地雞肉/魚肚/花菇/ 雲腿絲/高湯/扁陽春麵Japanese Chicken Meat/ Braised Fish Maw/ Black Mushrooms/ Julienne Yunnan Ham/ Supreme Broth/ Flat Noodles 個高湯好濃郁~好甜飲完都完全冇口渴嘅感覺!而扁陽春同棉花雞嘅配料好夾麵條粗幼適中 有咬口 而且配料同麵條份量都幾多🥄呢度個湯匙特別大隻,務求令食客食每一啖麵同配料之外都有滿滿嘅高湯一齊送入口中慢慢品嚐再加一個小食👍玫瑰豉油雞中翼(四隻)$44Marinated Chicken Wings with Soya Sauce (4 pieces)雞翼好入味 而且煮到一咬已經即刻做到骨肉分離乾玫瑰豉油烹調到好濃稠雖然定價有少少進取,另外都仲要再俾10%服務費我哋兩個人都食咗~$280但而家乍暖還寒嘅天氣真係好適合食呢啲暖笠笠嘅湯麵😋無得頂!

🍜 海龍皇湯 HK$140>藍蟹肉、海蝦尾、北海道魷魚、北海道刺身帶子、廣島蠔肉、蝦頭油、皇湯、陽春麵・味道:蕃茄湯底好重蝦油味🍅,啖啖蝦香🦐。魷魚彈牙🦑,刺身帶子真係啱啱好熟👍🏻。蠔肉新鮮甘甜🦪,陽春面幼身吸湯但唔會淋晒。蟹肉因為碎上所以唔係好食得出味道,海蝦都係~但整體係驚艷嘅!湯底係滿滿海鮮嘅鮮甜清香,會想飲晒湯嘅程度!・口感:清爽但有啖啖海鮮醇香咁,唔heavy但會留有餘韻嘅香氣,讚!・・・・・・・・・・・・・・・・・・・・🤰性價比:高~🤰9衝度:9衝~🤰結論:一直聽過佢大名但都冇食過,不過幾位同事一致話以前更好食,仲話大圍好食啲XD

I just recently know that the owner of this place used to be the sous chef at Caprice, ah interesting, no wonder why he could come up with such interesting noodles, it’s like Asian and western fusion😋 I tried the seafood and black broth noodles back in their original store in Tai Wai and they all are pretty unique and this time at their Causeway store, I went for the cotton chicken noodles(the inspiration is probably from steamed fish maw with chicken, a very traditional dim sum), the broth isn’t as rich as the seafood broth but I love how creamy it was, and the fish maw has completely absorbed the essence of the broth and it was so lovely😋 I reckon I like the seafood noodles better but this is also a very satisfying choice when you want something less fishy😊
