Big caveat: we didn’t try the steak. I don’t eat much beef anymore, so it’s not on me, but my friends inexplicably chose burgers and a porkchop over the steaks. So take this with a grain of salt.

On the same street as Brut in SYP, Quartermaster shares a space with Blade and Bones, its butcher. Obviously all the meat is straight from B&B's coolers, and QM staff go across whenever a steak or porkchop  is ordered. As such, the restaurant itself is tiny – I think it fits 16 people uncomfortably, and it’s snug even so. It's a very casual setting, with the food served on wooden serving boards and such it's more like Big Bite by HKU, than a classic steak place. The corkage is expensive ($250 a bottle), but they have a strange deal where if you bring your own wine and spend over HKD 1000, you’ll get 10% off the entire bill. Drinks otherwise are not unreasonable for a SYP restaurant at $60-80 for a beer or glass of house wine. Service is great though, and they tried their best to get us a comfortable seat that avoided the leaky ACs on the ceiling. By the time this review is written though, they’ll have undergone some minor renovations so hopefully that will be dealt with.

Not much marinade or seasoning, so these rely on their inherent porkiness. Unfortunately, they were overcooked, so the pork was dry and a bit too firm, but it’s still 50% fat, so they were tasty enough with a squeeze of lemon and the special mayo. Nothing amazing but they were like $80 so a fine appetizer.

Side salad with adorable mini bottle of oil and vinegar (hope it’s reused!!)

Very interesting mix of homemade sausages, which include Chorizo, Cumberland and two others I don’t remember. While they’re as flavour-packed as typical sausages, when you bite into them, they kind of fall apart, not holding together like typical commercial ones. I assume there are fewer binding fillers, which makes you question how much more crap (besides the standard questionable sausage meat) is in store-bought ones… Worth trying I think.

Unusually at QM, the pork chops are the same price or more as the beef– this is the cheaper one (not the Mangalitza), but it was still phenomenal. Juicy and flavourful in a way I’d never seen in a standard grilled chop – each bite is just packed with Maillard and umami. This is a porkchop to define porkchops. Simply delicious and a must-try if you like pork.

Overall: QM is as no-frills as it gets. Some interesting dishes on the menu, but barebones atmosphere and presentation. It’s reasonably priced – we paid 360 p.p. for 4 of us, with 2-3 drinks each, though with just that one premium cut (the porkchop), and we weren't really full. Expect at least double that for a full steak meal, which isn't a terrible deal for great meat. Don’t bother going if you’re expecting fine dining or even a classic steakhouse. Recommended for a guys/girls night where you just wanna eat giant slabs of meat and drink. Try those porkchops!

The burger was on point. The patty tastes so good, the butcher of the same owner is literally next door. Plus, the waitress and manager were very nice and attentive. I would definitely recommend foodies to try this place out.

話說呢陣子要修身只能食肉所以每餐都搵有得鋸扒嘅地方搵到去西營盤 佢店面唔大店面分開兩邊 左邊可以買肉拎走亦可以買肉之後去右邊嘅餐廳烹調堂食肉嘅質素認真一流 亦都可以根據自己嘅食量選擇肉嘅大小食幾多gram由自己話事配菜唔算多選擇 主要係鋸扒食肉睇住佢煎每塊扒嘅時候都用timer計著同用肉嘅脂肪 代替油去烹調就算你塊肉有幾厚都可以做到你想要幾多成熟外面金黃香脆 裏面鎖到肉汁建議早少少去最好9點前因為之後個廚會收工由其他服務員代烹調

I've been to Quarter Master twice now and really enjoyed the burger both times. I kept it simple on the first visit with just a beef burger with bacon (my preferred 'test' burger for comparison purposes), and was honestly thinking about the burger for weeks after so had to go back and make sure it was as good as I remembered! What's great about Quarter Master: They make the patties fresh daily, sourcing the meat from their attached butchers (Bones and Blades) next door, so the flavour is very good. And they don't waste a good patty with poor grilling - these are cooked perfectly and the bun is toasted on the same grill, so you get a little bit of the beef fat on there. Pickles on the side (and I asked for extra, because I love them) so that you can distribute them on the burger yourself. Tomato sauce and mustard on the table. Bun did not disintegrate as I got close to the end of the burger and there was a good patty to bun ratio. 

Tried the garlic parmesan fries the second time. These were good, but not incredible. That's okay though, because I'm all about the burger. Would like to try some of the other variations of the fries (as well as the other burgers!). We also had the churros, which were a really generous serving size and very tasty.

Verdict: A straight forward burger, well executed with high quality ingredients and good cooking. Will eat again.

Polled pork burger反而令人喜出望外,手撕豬肉肉質鬆軟,應該係將豬肉先焗再手撕然後用返啲gravy加返洋蔥再煮而成,洋蔥肉汁非常香濃。其實,我哋細個對豬肉漢堡嘅認識好多時候都係有由豬柳蛋漢堡開始。其實,如果你鍾意睇鬼佬飲食節目,好多時佢哋都會用手撕豬肉嚟整三文治同漢堡包,而且非常好味!

至於薯條,係連皮切幼條再撲上麵粉落油鑊炸,所以食起嚟面頭非常鬆脆!仲有就係佢哋支茄汁,我差不多食咗佢半支,味道偏甜,而且好似食到細碎嘅番茄蓉,好味過大家由細食到大嗰啲牌子好多!

呢間嘢可以encore,下次嚟試鋸扒,因為佢隔籬仲有一間舖姊妹舗賣凍肉,有熟成牛肉,睇價錢食lunch抵食過晚餐好多。

虽然有点点remote,但是值得专程来吃,而且性价比很高!牛排煎得非常好吃,了,挑选的hanger beef是第一次尝试,还蛮不错的,店家自制的BBQ sauce配上牛排—完美好嘛。薯条等小食也都炸很好,beef tartar有点点辣了。土豆球要蘸自配的酱和番茄酱最棒。下次想来试试汉堡和sausage。唯一的缺点就是座位不够多吧。如果是人数多的就最好订一下位。酒水的选择也有点少了。 总体而言缺点都可以忽略不计。

踩單車去到西營盤,諗住上第三街,高街蘇豪區食晏,由東邊街上,經過第二街,見到有間叫Quarter Master餐廳,隔離就係Bones & Blade凍肉店,去過巴西經驗話我知,如果開凍肉店嘅舖頭有埋餐廳,D肉類一定好食;但又想上去第三街,高街睇睇有無其他餐廳,發覺都係大同小異,決定落返去Quarter Master.嚟到問肥仔廚師最細嘅burger係咩size, 因為之後仲要踩車,唔想食太飽; 佢話佢地一率都係150g嘅澳洲牛,咁我就叫咗個cheese burger加onion, 唔使幾分鐘就送上檯,個包好軟熟,一咬落去好多肉汁,唔係血水,cheese都溶到7788,洋蔥係熟嘅,全部味道都夾到好好,肉鮮無甦味,雖然成個包都唔細,但好快就食完一個,唔油膩,真係好想叫多個,唯有等下次。肥仔廚師好友善,入到呢間餐廳感角似係外國。

Came here for a dinner on a Sunday night; the place has a nice, relaxed vibe and opens out onto Second St. We were seated right away. We ordered the spicy lamb burger, the beef burger with cheese, the piggy fries, and the green salad. In a nutshell, the burgers and the fries were awesome. The salad, not so much. The lamb burger was really tasty--I especially enjoyed the yogurt sauce that came on the patty. And the pickles were also great! I generally don't enjoy pickles on my burgers, but I couldn't resist piling these bad boys onto my burger. They were just 'pickley' enough without being too sour and drowning out the rest of the burger's flavors.

I had a bite of the beef burger as well, which was great--juicy and flavorful!

Quarter Master's "piggy fries" are probably some of the best, if not the best fries I've had since coming to Hong Kong six months ago. Paired with the just-sweet-enough ketchup or the delicious BBQ sauce in the quirky glass skull container on our table, the fries were definitely a necessary indulgence.

The green salad was, though, pretty lackluster in comparison. It was essentially just a bowl of lettuce and spinach, accompanied by a little vial of vinaigrette. And that was it. Perhaps a nice salad (or at least just one with >2 ingredients) is a bit too much to expect from from a steak/burger joint, but including a salad like this on the menu just seemed a bit perfunctory.

Overall, though, we felt the burgers and the fries made Quarter Master well worth the trip.

Giving a new meaning to symbiotic relationship, Quartermaster is a small restaurant attached to Bones & Blades, a butcher that embraces the concept of sustainable farming.  By using only small family owned farms, where the grass fed cattle roam free, grazing on nutrient rich grasses, the collective aim was to provide top quality steaks.

As we arrived for our dinner and were seated, there was a clear link between the restaurant and butcher, with a dry ageing fridge acting as a window between the two spaces.  We were seated right below the ageing beef; but it wouldn’t be the only time we’d be confronted with raw produce!

Quartermaster is very much a casual dining spot, with seating for around twenty, at full capacity, most of the space is taken up with the kitchen area.  Tables were small and casual, each with paper placemats and skull shaped ketchup receptacles; yeah, the blood red of the sauce in the clear glass skulls was a little macabre!  No menus were presented, the short and sharp menu located on a huge blackboard that was a little hard to read at times.

We’d only intended to come for a couple of quick steaks, just to check out the quality of the beef and to see if Quartermaster would be a good little regular dining spot.  But of course, it didn’t really work out that way; we’d spotted a beef tartare on the menu and decided it was a must try.

Our wild Herefordshire beef tartare was presented on a simple bread board with a roll of toasted baguette and was packed with capers, gherkins and jalapeños.  Unusually, there didn’t appear to be any egg yolk with the tartar, which often gives a slightly creamy texture to a tartar and helps bind the dish together.  I have to say though, I didn’t miss the yolk, the fresh beef was lovely and tender, quite sweet and well balanced.  The gherkin gave a little acidity and a salty flavour came from capers; I purposefully skipped the heat of the jalapeños, but the girl thought it was a nice touch.

I’d ordered 250 grams of the grass-fed Australian OBE tenderloin, which was duly presented to me prior to cooking for some reason.  I’ll admit, the raw beef looked shimmery and fresh on the wax paper it was presented on, but I really just wanted it on the grill and cooked for consuming.

I’ll freely admit that I loved watching our chef prepare my steak, and as a bonus, I was close enough to the grill to get the smokey aroma of cooking beef start my saliva ducts working overtime.  The smell reminded me of times back home grilling a decent steak on the BBQ.  By the time my steak arrived, I was literally salivating at the prospect chowing into my meat.  Presented incredibly simply on an iron plate with a piece of cos lettuce for company, the steak looked the goods.  I’d asked for medium rare, but found that it was probably a little closer to rare; not really a problem as I’d rather slightly under-cooked than over cooked beef.

I found the beef to be very tender, well seasoned and quite tasty; but it did suffer a little from being rare and not medium rare.  The beef was actually still cool in the centre and really needed an extra few minutes on the grill.  Not a disaster, but it would have been more flavoursome with a bit more cooking time.

Initially wanting a steak as well, the girl had made a last minute decision and ordered the beef burger with bacon and cheese.  It turned out to be an inspired choice, the fat and slightly greasy looking burger had cheese melting all over the place and bacon was literally falling out of the sides!  One bite was all it took to understand that the Quartermaster burger was a thing of beauty; the medium rare patty was meaty and delicious, the cheese and bacon a perfect balance of saltiness and cheesy goodness, the special sauce providing a little zing.  I’d only been allowed one bite from the girl (and I took a big one), but it was enough to call it the best burger in HK!

Served with our mains were some rough cut potato chips with the skin still on; the basket filled with golden sticks of joy.  Crunchy exterior and soft in the centre, the well seasoned fries were delicious and very more(ish).  Each perfect bite delivering a punch of flavour and an audible crunch.

We did decide to hang around for dessert, but there wasn’t a lot of choice.  There was only one dessert on offer, the ‘bounty in a bowl….  It sounded pretty fancy, but was really just a simple bowl of textures and flavours of chocolate.  Simple as it was, with layers of milk chocolate, coconut and dark chocolate, it showed that very often, simplicity can deliver the biggest wow moments.

With a disc of dark chocolate covering a pile of milk chocolate fudge and coconut cream, we completed a satisfying ‘crack’ of the disc with our spoon to reveal the concoction underneath.  It was wonderful and creamy, the simple flavours blending together for a taste explosion!  Crunch came from the chocolate disc and there were hidden squares of chocolate jelly in bowl, each providing a surprising punch of flavour.

I’d gone to Quartermaster looking for a decent and reasonably steak restaurant that I could visit regularly when I wanted a simple meal.  To be sure, I could definitely go along and have a decent steak for under three hundred bucks; which is no simple feat in Honkers.  What I’d really found though was (arguably) the best burgers in town.
In fact, we loved the burgers so much at Quartermaster, we’ve  been back far too many times in the two weeks since our first visit.  I’ve gone there for a quick weekday lunch (there is a lunchtime special that includes a starter, chips and dessert), we’ve gone there for an after work burger and most recently a Saturday afternoon hit of those delicious burgers.
I think I’ve found a new food addiction….

Dinner: (1) steak tartare - it was ok, but would have preferred a bit more flavour; (2) homemade BBQ sauce - bit sweet for my pref; (3) ribeye - overcooked; (4) pork chop - nicely prepared; (5) fries - awesome! VERDICT - meh. SUGGEST - the fries!

朋友喜歡有機食物,相約去試這間餐廳。地方有點像美國小店,幾ok.我點咗 tenderloin steak,幾有趣係價錢備以重量計算,由肉店提供,客人看好了就拿去廚房煎。好tender,好juicy。前菜有蘑菇同埋薯條,可惜選擇不多, 最大鑊呢係冇湯,唔係賣曬係冇。所供應嘅紅酒都ok, 價錢都唔貴。 可以再來。
