Zuma, a casual and stylish modern Japanese restaurant, very popular for their weekend all-you-can-eat champagne brunch, has introduced a Seasonal sashimi 廚師特選刺身($2,280), created by their Head Sushi Chef, Kazutoshi Endo.

The presentation of this sashimi platter was flawless. Its colours and composition were movingly beautiful, and the sashimi was exquisitely fresh. The Hokkaido uni was lifted by a refreshing flowery scent; the seaweed jelly was a tad sour and had an interesting texture, and the lobster, adorned by some purple shiso flowers, had an impeccable texture.

The tuna, served with truffle shavings, tasted attractive, and the grilled fish, dressed with pink rock salt freshly grated by the waiter in front of us, was also marvellous.

選料方面, 全部都是相當新鮮的海鮮, 當中最吸引的要數吞拿魚, 面頭加上了松露, 松露的清香配上吞拿魚的鮮甜味道, 效果是相當不俗的. 而海膽味道鮮甜, 完全沒有腥味, 當然是水準之作. 另外, 龍蝦亦是教人驚喜的選擇, 肉質爽口, 令人滿意. 另外, 也試了魷魚和鯛魚, 味道清新, 鮮味十足, 也是不能錯過的項目.

Shima-aji 縞鯵
: 8分, 另外大廚也特別預備了一客縞鯵給我們試試, 不過大家請留意的是這客縞鯵並不是藝術盛宴的菜式. 刺身切得夠薄, 肉質嫩滑, 味道鮮甜, 不過稍嫌醬汁下得太多了, 有點蓋過了縞鯵的味道.

I firstly tried brunch at Zuma in 2009... 4 years ago! It was quite a fascinating dining experience and my friend and I would like to revisit it again.

Honestly, when we arrived at Zuma at 1:15pm, I murmured, "What a stuffy restaurant!" I worried that the poor air-conditioning might be unfavourable to the sashimi on the self-help counter... luckily when we sat down for a while, the air-conditioning came back! Guess it might be too crowded once at the beginning... hope Zuma would improve this.
 
The target customer is definitely westerners, and most of them came in groups. So the atmoshere was very causal, hilarious and relaxing. Sometimes the food counter was a bit crowded but all people got their food in good order. Thanks to the high ceiling that the restaurant was not noisy though a bit busy.

I ordered all except the white wine. All are excellent and good for pairing with most japanese dishes. You know what, the champagne is selling at $590/bottle at Watxxx's Cellar...exactly the same price of this brunch! What do you expect??

Mainly salmon, amberjack, sweet shrimps were provided. Fresh! The wasabi was freshly ground and you could see its rough texture.
Sushi rolls were made typically delicate and bite-sized too. Sake time again

Not much to choose from starters but all were exquisite. Salad, skewered chicken wings and mushroom, deep-friend potato ball and chicken. Sauces were tailor-made to up the flavour. Don't miss the calm soup which was unexpectedly creamy and sweet too.

I was afraid that this grilled fish might be dry but I was wrong. It was still juicy when I had a bite of it... Good pairing with champagne, yummy yummy.

The lamb didn't look appealing when being served. It looked overcooked but I was wrong again... perfectly medium! It matched so well with the red miso sauce. I can't imagine that such fushion style could be a good companion of red wine and sake

This platter absolutely added lots of eye candy to the dining experience
. Just the same as what I had 4 years ago: ice-creams on the rock, mini-desserts and assorted fruits. 3 scoops of flavours include chocolate, strawberry and sesame, guess it's different for every time. The milk pudding with mango was very smooth!

Staff were highly effective and attentive to refill our wine quickly ---> It's very important! 

A friendly staff asked me what I was looking for when I stood in front of the skewing counter (which was empty). She locates where I sat and got me two chicken wings when the food was done.
It would be great if they could put a smile on their face.
題外話/補充資料: As I know the brunch on Sunday splits up into 2 sessions, 11-1:30pm & 1:30-4pm Recommend you to go on weekend for a 3-hour one time enjoyment (12-3pm)

I have been to Zuma for brunch and dinner several times but this is the worst experience I have ever had.We had the second seating (which started from 1.30pm) and we were sitting outdoor. We were sitting for 20 minutes but no one served us any drinks, not even water. We asked the waiter at least twice then finally we were served some champagne. It was also very difficult to get the waiter/waitress’ attention, a few of us need to shout together “excuse me” both in English and Cantonese though sometimes we still failed to get their attention.As I can see there is not enough manpower (that’s why they served that slowly), I requested the waiter to give us a bottle so that we could serve ourselves as we had 4 people but he rejected our request.Buffet is served from 1.30 to 3pm. However, when we went to get more food at around 2.30pm, raw oysters, clams in miso soup, chicken yakitori and meat ball yakitori, hamachi and tuna sashimi were sold out! I have never come across this before. Food was refilled very quickly every time I was there for brunch. While we were very disappointed and headed back to our table, I saw a western waitress who brought a few plates of raw oysters to some diners who were also sitting outdoors. I then asked the manager (an Asian girl who claimed that she can only speak English) why the food sold out and not refilled. She said the kitchen did not expect that some particular food was consumed a lot and quickly therefore they did not prepare enough to refill. She didn’t apologise but just said thanked us for the comment and went away.When we were asked to order the main course, we specially requested two dishes to be served first (as two of my friends needed to leave earlier) and the rest of us can be served later. Eventually, the dishes we requested to be served first end up came last.We also ordered two tenderloin for main course but they were not even warm.Some people may stay silence on this kind of dining experience as they prefer they will never return to those restaurants rather than complain. For me, I always like Zuma (and that’s the reason I go there so many times) and I want to go there again. I hope this letter can bring the attention to Zuma’s senior management and result in some positive improvement.

Initially I decided to go without alcohol, but as I stepped down the spiral stairs, I was immediately offered a glass of Bellini. How evil, so I have no choice but to compromise and had their wine brunch! I had never been Zuma for food, I have only been to their bar so I was kind of surprised by its nice dinning settings beneath, particularly the al fresco area. Both the indoor and outdoor furnishing are impressive, grand but relaxing setting.

Same as many other restaurant's brunch, Zuma brunch starts with a buffet starter. The choice range was vast, all of them are Japanese dishes (since Zuma is a Japanese restaurant.) the dishes platting was nice, many were meticulously done. The starters were generally nice.

Baby Asparagus
Zuma's aparagus was prepared with peanut sauce. The sauce was very savoury with strong peanut taste. There were peanuts bits in the sauce to add on extra texture to this dish. The baby asparagus were quite thin, but were fresh and chewy.

Cream Croquettes
I didn't expect this to be cream croquettes, I thought it was deep fried tofu. The outer crust was extremely crispy and free from oil. The filling was very creamy and thick. It was lovely.

Crab Meat Roll - I thought this was mozarella cheese roll but turned out it was crab meat roll. The crab meat were made meshy and sweet. It wasn't too bad.
Sweet Shrimp Sashimi - I have always love sweet shrimp, they were extremely tasty. Zuma's shrimp sashimi was very sweet and fatty. I easily killed 10pcs by myself lol. It is usually difficult to find nice shrimp sashimi in buffet and I was extremely contended with Zuma's sweet shrimp sashimi.
Eel roll - The Eel Roll had a cute outlook and tasted pretty nice too. The Eel was fresh, sweet and fatty.
Tamago - I actually had no expectation from the Tamago after seeing its appearance. As expected the Tamago was very rough in texture and not sweet enough. It had a layered texture, but just not good enough.

Tofu pot
This was extremely flavourable, the tofu was very smooth and went well with the miso paste, sesame bits and chopped green onions. It was just too lovely that I urged everyone on the table to try it.

Fried Chicken
I had no idea what it was when I picked it up, I thought it was some kind of deep fried mushroom lol. The chicken was very tender with crispy skin and went well with the mayo sauce on top. Loving it.

~ MAIN COURSE ~

By the time for main, we were quite full already, but we decided to order a few to share among us.

Sirloin Steak, Sauteed Mushrooms, Wafu Sauce
We requested the beef to be cooked medium but it was hideously rough. Its look was quite burnt and tasted same wise. It was too well done and the steak became extremely rough. Totally disappointed.

Salmon Fillet with Ginger Teriyaki Sauce & Pickled Cucumber
Although the salmon was not particularly pretty, it came in with a look out of my expectation. It was tender and savoury in taste, the sauce at the side definitely brought up the flavour of the salmon.

Barley Miso Marinated Baby Chicken, Oven Roasted on Cedar Wood
I was very disappointed at the presentation of the dish. The chicken looked dead on the chopped board with disgusting miso paste spread on top of it. The chicken was tender, probably is black meats. The miso sauce was the same as the tofu's miso paste which was boring. The miso didn't really enhance the chicken's taste. I think this is a failed dish.

Ice-creams - There were three flavours of ice-creams on the ice cube - Tofu, Mango, Melon. The tofu was too bland, the mango and melon was refreshing and at suitable sweetness. All the ice-cream texture was quite creamy and tasted nice in generally.
Mint Chocolate Cake - This cake was quite lovely too! It was mint and chocolate mousse with sprinkles of explosive sweets on top. The combination paired pretty well, with refreshing mint balancing the strong chocolate taste, and I also love the explosive sweets adding a twist on the texture.
Blueberry cheesecake - I thought this was only a blueberry preserve but it was fresh blueberry spreading around a soft mousse like cheesecake. The soft cheesecake was surprisingly savoury with strong cheese taste. Not bad.
Fruits - Both the watermelon and the melon had very thin skin, however they were tasteless. I thought they were from Japan or something.

Despite the mains, the food was generally nice. The ambiance was nice and relaxing, the al freco terrace is the perfect spot for smokers(not that I smoke.). Perhaps I should bring my family here sometimes.

搭正一點半,接待處開始叫已登記o既客人埋counter帶佢地埋位。好奇怪,當輪到我地時,佢淨係叫我地企喺度,但就安排其他未登記o既外籍客人入座,莫非黃皮膚就要等耐啲
?!等左五分鐘,見勢色唔對,小肥行去counter問個究竟,點知換來接待生冷漠o既對待,似乎有歧視中國人之嫌
!當時無人理睬,真係覺得又氣憤又無奈!嘩,再等左五分鐘,當比我地遲到o既食客都已經就座時
,肥肥家族終於有得落五樓埋位,點知負責我地張枱嗰位姐姐仔態度仲加惡劣
!酒水唔問就冇得飲,問兩句仲黑面神上身,好似我地得罪佢咁,毫不友善!服務態度可以話係上下一心,都係咁唔歡迎食客,真係比一分服務分Zuma都嫌多(Openrice應該考慮加插一個零分比食評們選擇)!

Zuma位於置地,即中環核心地段之名牌廣場,搭地鐡連街都唔洗出,隔離又係五星級大酒店,諗住方便得黎都算係高級啦,點知… 其五樓餐室除左樓面高之外,枱櫈都比較矮,室內空調又唔多夠,感覺非常局促且唔自在!因餐廳設有室外座位,除左食客同侍應出出入入之餘,亦有多隻蚊蟲陪伴(唔知係咪同落雨天有關呢?!),自助魚生冇野摭擋,心覺不甚衛生

話說Zuma個自助餐有兩種成人收費:$490 + 10% 之不含酒精收費;$590之含酒精收費,不過只限包日本清酒Dassai 50獺祭純米大吟釀,紅酒,白酒,同Veuve Clicquot香檳。雖然小肥唔多飲日本清酒,不過都認得出擺出黎嗰啲sake樽同餐牌上及服務生所講o既Dassai 50獺祭純米大吟釀好有出入囉

唔知係服務生本身質素問題,定係Zuma餐廳吝嗇作風所至呢,如果我地唔主動叫人黎,根本係冇人會加酒比我地飲


Zuma個自助餐舖排分成兩部份,一邊係魚生,另一邊係熟食。因為人太多,兩條隊都毫無流動性,大肥爸爸指出,排隊都排左三分一時間,安排非常失當,因此亦造成不少不守秩序o既情況,如「打尖」同一次過攞哂成碟食物走等:

 魚生地帶o既前段同後段都係一模一樣o既刺身拼盤,理應可以造成兩個入口,增加流動性,不過Zuma似乎並不同意,只有一邊擺放餐碟。Zuma o既刺身壽司同卷物種類比小肥想像中少,可以話係同其他非全日本料理所提供o既魚生差不多,真係幾失望。最奇怪o既就係刺身o既形狀,三角形得真係好非一般囉!

 熟食嗰邊有串燒,蜆湯,炸雞,雜菜,溫泉蛋,冷麵等等。去到龍尾則好唔夾地擺放左一大盤生蠔。生蠔係自助餐中最差o既一項,勁多沙同渣
!熟食中,以串燒最搶手;唔知係因為燒得慢,燒得少,定係啲人一攞就攞好多,成日都冇哂,小肥都係睇見人地有得食燒雞翼同燒肉丸先知有串燒供應
。中肥哥哥提到,可能五樓要燒埋六樓客人散叫嗰啲order,繼而造成供不應求o既情況;如果真係咁,小弟建議餐廳及廚房自助餐時間就唔好接散枱,專心一意為自助餐煮製各款菜式。

大約兩點三左右,黑面神服務生催促我地落單,order每人一份o既主菜。餐牌上o既選擇尚算多元化,有魚,牛,豬,羊等。小肥覺得最奇怪就係個list後面有兩三款係要加錢先可以叫,如和牛;心諗,如果要人食個五百幾蚊o既自助餐 再加錢食其他食物,不如索性唔好寫上餐牌比人揀啦,感覺好唔大方囉


 Hamachi Neck(油甘魚魚鮫):姐仔話餐牌上o既油甘魚魚鮫當日”not available”。當多口問佢係咪因為我地食二輪自助餐所以冇哂貨,佢繼續不回應


 Gyuniku no sumibi yaki to kinoko, wafu sauce(Sirloin steak, sauteed mushrooms, wafu sauce)見好多人都叫,賣相又唔差,諗住食牛都算安全啦,所以叫左兩份日式牛扒黎試。可惜,半生熟o既牛扒超韌,就連牙力勁到連碗都可以咬崩o既大肥都話「無能為力,啲肉根本咬唔爛」

兩點半,正當大部份客人食緊主菜時,自助餐counter已經冇乜人排隊,因為counter上大部份都係吉碟,就連個生蠔盤都消失埋,串燒就更加唔洗講啦,XO仔食左成個鐘都未見過一條串燒
!三點鐘服務生們正式宣佈自助餐快將結束,唔會再有食物供應,只會上埋個甜品拼盤,同斟添最後一次酒,三點三就收野。

拼盤入面有雪糕,蛋糕,同生果。其中雪糕會溶,所以客人必需先食;除非食生果者唔食雪糕啦,如果唔係o既話,食完雪糕先食生果,生果就變得唔夠甜
。再者,個人覺得Zuma以每枱客人送上一份甜品拼盤,除左小家之外,感覺仲好浪費添,因為唔係每位客人都食甜品,就算食都未必鍾意Zuma比嗰幾款囉!

講真,其他酒店提供o既自助餐除左有任食魚生,生蠔,飯麵,都會有任食龍蝦,牛扒,甜品等,價錢好多都比Zuma便宜,款式更比Zuma多,加上任飲日本清酒貨不對辦,冇獺祭飲,所以XO仔覺得Zuma個日本放題勁唔抵食
!其九流之服務及局促之室溫真係食到小肥又「hing」又勞氣
!當小肥竊聽到隔離枱客人講左句好有意思o既感想時:”Feels like Zuma is disposing their rubbish through this brunch!”
真係好有同感,食客o既高見簡直係一針見血!

Lounge bar supposed to be loud and for mingling purpose, I was pissed off by the arrangement despite the table was reserved as early as in December which the nice window seats were not hard to get.

Whern i found it days before 14/2, I used the reason to fight for my benefits, that Filipino replied with "no more dining seats" , I kinda roared to her and she raised her voice and we both act like mad women. At the end, I told her "I must talk to your manager, it's ridiculous that you can't offer a proper dining table when we reserved it in December "

I won the fight, the manager being mature enough to handle the complaint. A window seat was prepared and the staff was polite and well-mannered.

This dessert is just tooooo gorgeous! Top with a crispy coconut layer, rosebud, sorbet strawberry and bottom with cracking candy and raspberry syrup. So many different flavours and textures, can't stop smiling while enjoying it in my mouth

Amedei hot chocolate cake with espresso caramel
Not as surprising as the first one, filling easily cos it's full of choclate but it is still a very very nice one. These two desserts are very special and unique, one of the kinds you can't find it in other high-end dining areas.

題外話/補充資料: Bad receptionist. not a big problem tho cos you won't deal with them after the phone chat Nice staff Good atmosphere. Very speical, gorgeous and tasty dessert, a must-go dining spot if you have a big sweet tooth just like me!

I had found a nice contemporary japanese restaurant in central.zuma at Landmark is so stylish and cozy atmosphere. Almost of all customers are american or europe people maybe. I had- Salad- Aspara Robata- Ramb chop roast.. some other dishesand 4 glass of champagne.Location, Service, Atmosphere, everything is nice and very valuable, especially food price is not expensive. I never tried Roka in Hong Kong, only had it several times in central London as it was so close to my old home there!

One of my very good friends came back for good in Hong Kong, and she was very interested in trying Zuma despite all the bad things we had heard about this restaurant. so we decided to give it a shot.


Table was booked on a busy Friday night. When we arrived there by 8, the bar area was already so packed & we were led downstairs to the restaurant area. Similar to all restaurants serving comtemporary Jap cuisine, the decor was clean and neat, with a big open kitchen in the middle.

When we were waiting for another friend to come, we realised that 90%+ of the people dining there were whites


Waiters were in general polite but sometimes difficult to reach as they were always running between tables.

1) The Australian beef is the BESTTTTT course we had at Zuma. Even we didn't opt for the Wagyu, the pinkish beef is still so tender!!
The sauce was sort of sweet but we really liked it! Matched the beef well!

2) We also had the tiger prawn which the waiter recommended, but the portion was so small!! The texture / taste wasn't exceptional

3) Grilled Scallops - we had one scallop each and the portion was tiny, we literally finished it with one bite. No "wow" factor - doesn't like the seasoning & the scallops aren't really fresh.

4) Grilled Spring Chicken - okay, tasted like those you can find in traditional Chinese restaurants, but we were too full to finish it.

Drinks: 2 Bellinis, 1 Amai Koi, 2 Plum Sour
The 2 Bellinis were actually quite good, very fruity & sweet, suitable for ladies.
Didn't try the rest, but beverage prices are on the expensive side (expected in such restaurants though)

It is really like Roka in London - can't compare the prices cuz 2 cities are of different standard of livings
Though I don't think I will recommend Zuma to friends - i still prefer traditional Jap cusine

As the last visit was a few years ago, I really had no recollection of what the food was like at Zuma. All I wanted was to sit in comfort without the whole of Central crowding all over us, I just thought this might be an ideal venue.

Booking and re-confirmation was a breeze. As the lower floor was all fully booked, we were given a table on the 6th floor - where it was a kind of a drinks area at night.

We were seated in the sofa area which was quite nice and casual were it not for the close proximity of the opposite table and its diners. The seating arrangement was such that whenever the waiting staff wanted to attend to the other table, his/her back side would be right in my face! A little inconvenience perhaps but the real cause for concern was that these 2 tables were supposed to be shared by the same crowd at night, thereby making the closeness at lunchtime a little disconcerting.

In addition to the a la carte, there were 2 set lunches with a variety of dishes to choose from - both from the appetizers and the main courses. The difference in the price was the dishes on offer as far as I could see as the more expensive one consisted of items like steaks and teppanyakis. There was something that caught our eyes in the menu - a line that says something akin to 'the food is meant to be shared'. Errr, we didn't know what it meant so we decided to ask the manager and the reply took us by surprise. He said that the dishes were prepared in such a way that they could be shared. How so, we asked? He simply said, for example, 2 dishes could be given for the salads and each patron could dig into the sushi/sashimi that took his/her fancy. I guess the restaurant put the sentence down to ensure that their patrons understood the technique of sharing!!!!!

The seaweed salad that we had was mediocre, size on the smallish side and really wasn't that impressive. The sushi main courses were again small and devoid of freshness such high-end Japanese restaurant should possess - it was closer to the ones one can find at Three Sixty 2 floors below.

This dining experience explained why I had no recollection of that first visit - most unimpressive food.

本來諗住嚟係為咗食佢個牛肉他他, 但係佢哋話淨係Lunch先有, 話晚上做唔倒(唔明), 有點失望, 但其他食物都算OK.魚生很新鮮, 味道普通, 但最後的甜品簡直出色, 而且很SURPRISE有爆炸糖在內, 送來的時候會慢慢炸開個"COVER", 好得意, 就是這個甜品才令我滿意返, 亦令我印象很深刻~

Having been to the Baikingu brunch on Sundays several times - I can say that is it a consistently great place for tantalizing food & excellent value for money.The cost is extremely reasonable for what you get. For a mere HK$550 per person - you have an unlimited buffet (raw & cooked dishes) and free flow of Perrier Jouet Grand Brut Champagne, bellinis or sake - in fact there are other choices- I am just listing a few here. If you do not want to drink alcoholic beverages, then the price is HK$428

If you do not want to drink alcoholic beverages, then the price is HK$428. Children are free as long as there is no more than one kid per adult.
It is a must to have advance booking as the place is always fully booked. There are 2 sessions for lunch as it is so popular.

There is an extensive range of delicacies and the food is scrumptious. You begin your gastronomical trip with the Starter buffet first. You are completely spoiled for choice. Whether you are after melt-in-your-mouth sashimi, heavenly meat or yummy noodles - there is something for everyone.

Once you have had your fill at the Starter Buffet, you then choose one dish from the Robata or Open Kitchen.

Our table had the tempura moriawase - which is a selection of vegetable & seafood tempura. Absolutely fantastic! The batter was so light it melt in your mouth.

We also had the sake no teriyaki kyuri zoe - which is salmon fillet with ginger teriyaki sauce & pickled cucumber. The salmon was cooked to perfection & was succulent & light.

The other one we tried was the tsubu-miso gake hinadori no oven yaki - barley miso marinted baby chicken, oven roasted on cedar wood. This was very flavorsome & certainly worth trying again.

The Dessert Platter was divine. All the cakes were mouthwatering & it was lovely to have fresh fruit with it as well. To have such a selection of choice as well was quite amazing.

The outdoor seating is very comfortable & the atmosphere is very relaxing. The heaters were fabulous & we were very warm & toasty despite it being a cold day.

Zuma's Sunday brunch, the Baikingu brunch, is definitely worth coming back to again!

Zuma在飲食界可算是享負盛名,香港分店更被 Restaurant 雜誌評選為2009年全球最top的一百間餐廳,位置和風頭比起鹿悅、稻菊等星級日本菜餐廳絕不遜色。餐廳主打contemporary japanese cuisine,意思大約解現代日本菜。聽說來到Zuma,必定要一試它的sunday brunch。這個sunday brunch原來分作三部份,分別有buffet style前菜、主菜和甜品。所謂前菜,其實是各式各樣,五花八門的壽司、還有關東煮、白酒煮蜆、生蠔等等,賣相出色之餘,用料全是優質極品,你會問那一定拿足滿分對嗎? 未必。只可惜的是食神在加國生活多年,任飲任食的日本菜在那邊可謂算是開得成行成市,水準還非常高。即使近年在香港大熱的銀座藏人、金田等等也做得很出色。撇開裝潢和賣相,Zuma相比之下,未見特出。主菜點了烤羊扒和一口和牛,羊扒烤得外脆內嫩,香草調味適中,和牛同樣做得不錯,肉質tender又juicy。不過這個要歸功於材料,烹調方面其實沒有什麽花巧的地方。甜品跟前菜一樣,好睇多過好食。各款雪糕和蛋糕放在日式木桶內,再加入冰塊來點聚一番,賣相討好但可惜味道只屬一般
