Start with a full desk of cold cut. Everything is super delicate! My favorite is the bread and the pate, it matches so well with the uni and some pickles. The plating is super beautiful and it’s like fine art, which brings me expectations for the next dish.

🦀 𝑲𝒆𝒈𝒂𝒏𝒊 𝒄𝒓𝒂𝒃 , 𝒓𝒊𝒄𝒆
Best of the dish today to fit my Asian Japanese x French tongue. As chef Maxime Gilbert is known he so best to make use of Japanese ingredients to fusion with modern French cuisine. This dish makes use of two of my favorite ingredients included salmon roe and Japanese kegani crabs. This plate is western contemporary art and it’s actually so Japanese. It’s out of my expectation that the French chef makes executed and delightful Japanese x French dishes.

𝑪𝒉𝒂𝒓𝒄𝒐𝒂𝒍 𝑮𝒓𝒊𝒍𝒍𝒆𝒅 𝑺𝒄𝒂𝒍𝒍𝒐𝒑𝒔
Charcoal Grilled Scallops only added natural ingredients included oil and butter. Grilled with charcoal and put one slice of black truffle inside in a shell. It's really eye-catching and smells amazing!

𝑶𝒎𝒆𝒍𝒆𝒕𝒕𝒆, 𝑪𝒓𝒐𝒒𝒖𝒆 -𝑴𝒐𝒏𝒔𝒊𝒆𝒖𝒓
This is super cute and it is not supposing in a Michelin restaurant. Croque -Monsieur is a french toast, which is a brunch exclusive cheesy omelette with 2 mini pieces of cheese and hamburger.

Roasted 45 days baby lamb shank sliced in pieces, served with wickedly delicious shallots and green sauce. The lamb is tender and succulent. It's not so gamey and smells like a goat so even though you are not a big fan of lamb you should still try.

Another highlight of the dish is mashed potato. It's super smooth and creamy with thick and big slices of black truffle. It becomes my No. 1 potato pure ranking in HK. Talk more about why I am fancy to potato puree, back to the time I was in Sweden when I was studying. I basically made this dish multiple days a week in attempting different recipes to find out the so-called perfect one. Ecriture, Roboucon, and Louise really do so well and reminds me of the days when I was uni. Memories dish.
