Thanks to KENT1012's organizing as well as Ocean Three Development's Oyster Class Invitation, we arrived here on a weeknight to shuck some very fresh imported Oysters for ourselves, as well as trying out 2 wines for Oyster Wine Pairing supplied by Wine One @ Central, the venue of this collaborated event. For me personally, my close group of dining friends have always shucked our own oysters for years, so my personal goal for arriving here was trialling out this Oyster wholesaler's quality of s
Normally, if you go to APITA or City Super to buy your oysters even when 'unshucked', the prices range from around $45-$65 each, which is rather costly. But sometimes if I just need to shuck some fresh oysters which doesn't cost you an arm and a leg and I don't want to go to an oyster bar paying a greedy premium, where else could we buy some decent oysters? Ocean Three Development Wholesaler ( http://www.oceanthree.com.hk/ ) fills in this niche gap nicely, as their Oysters start from as low as $13-17 each for an Irish Rock, to only $19 for a Speciale Graded Fine de Claire!! If you think you're too sophisticated and need do higher end stuff to the likes of branded French Gillardeau No.1 as used in many Michelin 3 Star restaurants, guess how much it is? Only $28 each, as opposed to at least $4X-5X!!! When I asked for their price list I nearly swore in expletives, as why the heck have I been paying nearly double all this time buying them at Retail Prices elsewhere?

Bottles start from the mid $100's, and this Sea Ridge California Chardonnay 2009 was quite a quaffer with a typical creamy note, which suits the creamier oysters such as the below US Totten Bay as well as the Irish Live Rock.

* An Instructor from Ocean Three, is showing us how to shuck the oyster using the Hinge Method from the rear, which personally is more suitable for guys but probably the only way to approach if u want less broken shells. Unless you're shucking those 30 years old oysters that are around 30cm in length!

* The Crater Rim, a Waipara Valley Sauvignon Blanc Semillon 2009, from New Zealand. A little minerality with a light passionfruit tang, this suited the more minerally yet subtle oysters such as the French Fine de Claire. *

And of course there is no free lunch in this world. After trying out 6-7 oysters for the night, which were worth approx $126 according to their selling price list (well I think my hourly blogging rate is far higher than this), I've also entered into a pledge to go home and edit the photos then blog about it somehow if its any good! But the oysters were cheap and affordable by everyone and of pretty good quality, and if you buy enough for your 1st order they will happily provide you a free OYSTER SHUCKING KNIFE without shelling out extra to pay for one. And as I've said before just a few days ago, there are some free comp'd meals that I've had but never blogged about to be polite to the restaurant (), but everyone of us attending this event are happily endorsing this company for a good reason. It is cheap, and of good enough quality. I will personally buy from this again pretty soon some Wagyu beef and Oysters.
(But do insist and ask them for a free Oyster Shucking Knife for free, when u order. 不過唔好話係我教你, 不過 bargain 下都好. 如果佢地想多啲常客點都要做番啲嘢俾客人開心下! 不過佢肯唔肯送我就唔知啦, 但試下問都無訪啩...
