一月份,開飯喇與銅鑼灣兩座食廈合作,參與餐廳推出半價優惠,把握良機,約了四間一向心儀的食店,第一站:滝壽司。去過日本旅行也許都對「滝」這個字不陌出,多數指溪水,原來發音是「龍」。在 Cubus 商廈內已有幾年歷史,但抱歉,今日才來見識。14貫壽司盛全部以自家製昆布醬油漬調味,有點與別不同,豐富但輕身,沒有蓋過魚生片的鮮。組合方面都是香港人喜歡的魚款,不乏貝殼類,次序上爽甜交替,食材新鮮,壽司飯用日本米。壽司廚師發板亦包括前菜、蒸蛋、湯及甜品,份量足夠;美中不足,我不喜歡炙燒過的壽司有些苦味。 沙律廚師發辦由雜錦魚生片配生菜沙律開始,喜歡沙律上有幾塊薄片,口感添層次當然更好。先以肥美但魚味較淡的左口開始,塗了醬油,似乎提升了魚香,入口幼滑即化,回甘帶着醬油甜。接下來是非常爽的象拔蚌,混合壽司飯同吃,爽口軟棉對比。輕炙的北寄貝食落有些甘甘地,我估計是因為來自烤焦醬油某些元素,打了點折扣。深池非常肥美,赤貝很爽,金木鯛回甘極甜。魷魚頭頗特別,炙燒過迫出油份,而且不會靱。關鯖魚江戶風格,以鹽醋調味,軟柔有點酸。新鮮銀鱈魚,鼓油醃過再燒,豐腴滑溜無比。時令新鮮沙甸魚,難得吃到。慢煮鮟鱇魚肝永無失
