位於蘇豪新開的 SAAM,店子雖小,只有24個坐位,但卻滿載著由國際名廚Patrick Dang, 結集多年海外遊歷及效力多間頂級食傅府後引發的靈感,而製作而成的創意料理。是晚與食友來到,享用Patrick多道特色Fusion 菜。小店採用開放式廚房,內裡擺放多個高科技廚具如離心機和超聲波均質機等,食客可邊等待食物,邊欣賞廚師們在用心烹調每款菜式。 先點了杯Cocktail。個人不常飲Cocktail,因很多Cocktail 糖份比酒精成份還要多,有時像灌糖漿似的,小妹真的嚇怕怕。不過,這Parmesan Cocktail,隱約的Oregano、橄欖香和Parmesan 芝士味,襯托著蕃茄再加入少許Vodka,味道如凍湯一般清新,非常特別。餐前小麵包樣子有點像Pita Bread,但來得更鬆軟濕潤,口感也帶微微韌性;暖暖的麵包裹著乳酪和青西瓜肉同吃,比配牛油或油醋更清爽開胃。鮮開赤貝爽脆鮮甜,配香甜西瓜和微辣的Mojo Verde,惹味呢。Foie Gras Candy 樣子小巧玲瓏,薄脆的無糖白朱古力中央,是濃香油潤的鵝肝和帶酸甜的Cherry Gastrique,醉人軟芯,入口溶化

在SAAM這裡,讓小妹回想起巴塞裏由El Builli 主理人開的份子料理Tapas吧 ╴Tickets Bar;不論是食物質素﹑創意﹑神祕度,或是各國食材的貫徹應用,SAAM 都與Tickets 很相似,但這裡的食物價錢卻相宜多,絕對值得一試﹗
