早說過在土瓜灣生活了超過30年,就算家陣都會經常過去探望母親,而偶爾有空,都會四處逛,緬懷一下昔日的光景。當年的牛房都已經活化了,但總是覺得空氣中殘存有牛糞味。富粥就在牛棚附近,平日的下午沒多少客人,望望店內,竟然有深圳常見的台山式腸粉。及第粥餡料有肉片、粉腸及豬膶,用的是廣東開花粥底,料是新鮮,但粥底食落似乎有師傅,因為口好乾。牛肉腸即叫即蒸夠認真,要加分,落粉漿時加了蔥花及芽菜,令口感變得豐富,又是一個加分位,雖然廣東式賣相會比較滑溜,但吃起來卻一點都不差,只嫌牛肉味道稍薄,基本上令人滿意。

即叫即蒸夠認真,要加分,落粉漿時加了蔥花及芽菜,令口感變得豐富,又是一個加分位,雖然廣東式賣相會比較滑溜,但吃起來卻一點都不差,只嫌牛肉味道稍薄,基本上令人滿意。

剛開業時常常光顧,覺得是有心的小店,老闆態度友善,粥品腸粉有水準。。。但此情不再。。。不知是否因最近在紅磡開了新分店,老闆分身不暇,未能两邊兼顧。。。導致土瓜灣總店水準下降?。。。粥底起粒粒,並不是慢火煲至米粒開花果只,而是好似溝入米飯加熱變成粥糊果只。。。而且仲好咸,無晒米香。。。好失望。。。真心希望老闆可改善,因想繼續支持。。。唉

Rice noodle roll, also known as CHEUNG FUN. Usually can find in Chinese tea house which really rolled up. However the one selling here is not the usual one. No rolled up and just a big piece of rice noodle. Other gourmet say this is Toi San (somewhere in Chinese) style. You can freely choose the ingredient. I picked BBQ pork and egg. Then chef will add them into a tray with rice milk and put into steamer . Serve with soy sauce.You can see the rice noodle is super thin. Just like a silk steamed.

You can see the rice noodle is super thin. Just like a silk steamed. The soy bring out the rich rice flavour. Egg is right cooked no a bit hard. BBQ Pork is soft and still sense the barbecue smell after 2nd cooking.

粥嘅話皮蛋好大件,份量夠。瘦肉係一件件,並非瘦肉絲,一碗好有份量。唔會好傑。啱曬我口味。

腸粉皮啱啱好,唔算太薄,都唔係太厚。有小小透明,比我鄉下果種要好D。碎牛夠多,夠正宗啦。
不過豉油多左D,我覺得有D咸。

值得推介去食啊!

一碟腸粉當不能滿足胃胃,再來碟生菜叉燒腸($16),曾看過內地銀記或華輝拉腸的照片,加入生菜在內地較為普遍,在香港反而較少看到。

全瘦叉燒有點甜味,份量比豬膶多一點,加入爽脆生菜的腸粉果然清爽很多,比只用蔬菜伴碟的又勝一籌。

腸粉醬油據聞以蒜頭、麻油煮過,還用電熱板保溫以免熱腸粉遇上冷醬油而降溫,果然有心!醬油煮成甜甜的也有很輕柔的蒜香,跟腸粉合拍得很,好吃!

本打算再來碗冰凍紅豆沙作腸粉後甜品,只是自己的招財貓效應又來了,剛才大量虛位的富粥轉眼坐滿,不是街坊的月巴人也識趣地讓出桌子好了。

早前在蘋果日報見到介紹這裏的潮式腸粉,由於我未食過皺皮的潮式腸粉,因此便特登來這裏一試。我們叫了雞蛋叉燒腸($17)及豬膶腸($17)。這裏的腸粉質地不太滑,豉油不太甜,添加了麻油,我不喜歡,因為我的主張是一碟菜色如果本身是美味的,是不用添加麻油的!而且雞蛋及叉燒也只是一般。豬膶大塊,份量也多,但不夠爽。總括而言,非常一般,試過便算。

咁岩經過土瓜灣。所以就顺便試下黎呢到食个腸粉。之前上網睇到。同我細个食嘅腸粉一様嘅整法。我好期待。但可惜佢味道不如我細个時所吃到的。17元一份。價錢等贵。小时候吃。只要1.5元。仲要勁大份。相對。而加物價通脹。但食特仲要宿了水。佢啲碎牛一啲都唔碎。好似另上咁。舖到个面到。如果混在一起。一定会更好。豉油方面。有點普通。甜啲会更好。

最近睇到誌介紹台山腸粉,專程去到土瓜灣一試。不同布拉腸,粉漿倒在鐵盤放入蒸爐,蒸好取出用鏟刮出落碟。腸粉不是綿綿的,少了米香,但換來是爽滑煙韌的口感,粉皮比看上去的要薄。款式的配搭亦不錯,雞蛋牛肉比較特別,另外點了的粟米魚片頗清甜。聽講這店是兩個年青人搭檔的,香港很多食市都因租貴捱不住,希望他們可繼續下去。
