三和叙在九龍城以至是香港的日本菜餐廳來說, 也甚為特別, 它的菜式走全能高檔日本菜路線, 從壽司, 到鐵板燒, 再到爐端燒也有, 這不是最特別的. 最特別是它是一家三層高的食肆, 以日本餐廳來說它的龐大應該算是數一數二. 裝橫木系中帶金色色調, 有一種低調中的奢華. 服務態度不錯, 有禮, 但師傅很忙, 忙得有點混亂, 師傅和待應有時會有較激烈的對話, 特別是坐在壽司枱前面的我能清楚地看得出, 幸好這不太影響當日用餐的食物質素. 雖說它不是天然的鮨店, 但其舍利依然有可取之處, 以赤醋作為壽司醋的主軸, 令壽司更有江戶前的風味. 味道比一般用白醋的重, 但不會蓋過刺生的鮮味. 舍利黏合度夠, 米飯粒層次分明. 溫度控制是這裡的硬傷, 特別是開頭的那幾塊真的有點熱, 這會影響食材味道上的發揮, 特別是沒有太多佐料的時候.刺身佐料主要是醬油, 簡單直接, 可以吃到魚的原味. 當中圖一的鰤魚, 圖四的富山白蝦及圖七的針魚味道和口感印象最為深刻. 冬天已過, 但這裏的鰤魚依然極為肥美, 微微炙烤油脂豐盈, 做法簡單滋味無窮. 富山白蝦口感軟融, 剛好當造, 外表閃閃發光, 鮮味十足, 用少少醬

In Sanwa Jo, you can taste sushi, teppanyaki and robatayaki at the same place. The sushi here is better than my expectation. Using aging red vinegar as the root of sushi vinegar is the Edomae style. The amberjack, white shrimp and saury fish are the highlights and other sashimi are fine in quality. The communication and tempo of serving is a bit messy and chaotic but the staff is attentive enough that hasn’t affect my dining experience much.
