朋友係潮州冷一名,約食飯好多時都揀潮州菜館,今趟亦冇例外,約左細佬去佐熟吳松街食間新開嘅潮州菜館,菜館叫太陽軒。潮州菜館好多時裝修都較為簡陋,有啲老店仲可以用殘舊形容,但太陽軒嘅裝修就非常泗正光猛。點菜留翻俾同行潮州冷負責,我只係攞住本菜牌揭下揭下,發覺菜價都好合理,依家好多潮州酒家都將菜價定得好離地,太陽軒嘅菜價就定得相當親民貼地喇。最抵食嘅六人套餐只賣HK$680,連加一茶芥每位計唔使HK$150,以晚飯計可算平到笑。友人點左個二人套餐,有潮州翅、鹵水雙拼、鹹菜鱔片、炒麵線同杏仁茶。潮州翅潮州翅同廣東燴魚翅其實大同小異,分別就喺個湯度,廣東酒樓燴翅會用清湯,清湯以老雞、火腿及精肉慢火煲成,湯喺煲好之後,裏面嘅湯料仲係完好嘅,成隻雞會完好無缺,其他肉都係,而湯亦會好清,冇乜油,但潮州翅用嘅係濃湯,煮濃湯嘅湯料同清湯嘅其實一樣,不過會用猛火煮成,湯煲好成隻雞會散哂,湯會好俗好多油,濃湯本身會相對清湯香濃,用作燴翅我認為更惹味。今晚呢度做嘅翅真係好到加零一,湯甘香濃甜,魚翅份量多,估算最少有三兩濕翅,發得相當軟滑,可以用繞樑三日形容佢有幾味美。除翅之外,筆者最鍾意嘅就係下面呢道鹵水雙拼,

潮州翅同廣東燴魚翅其實大同小異,分別就喺個湯度,廣東酒樓燴翅會用清湯,清湯以老雞、火腿及精肉慢火煲成,湯喺煲好之後,裏面嘅湯料仲係完好嘅,成隻雞會完好無缺,其他肉都係,而湯亦會好清,冇乜油,但潮州翅用嘅係濃湯,煮濃湯嘅湯料同清湯嘅其實一樣,不過會用猛火煮成,湯煲好成隻雞會散哂,湯會好俗好多油,濃湯本身會相對清湯香濃,用作燴翅我認為更惹味。

今晚呢度做嘅翅真係好到加零一,湯甘香濃甜,魚翅份量多,估算最少有三兩濕翅,發得相當軟滑,可以用繞樑三日形容佢有幾味美。

除翅之外,筆者最鍾意嘅就係下面呢道鹵水雙拼,雙拼可以任揀兩款鹵味,我地揀左墨魚同鵝片,個鹵水做到好香兼有不俗回甘味,鵝片肉好嫩滑,墨魚片又爽口,用靚料絶無懷疑。

鹹菜煮門鱔成日食倒,但用鹹菜煮嘅白鱔魚就第一次食,白鱔冇門鱔咁多骨,又滑身,鹹菜汁完全貫穿每片魚片。

正宗潮汕做法,並唔係炸得脆身的港式蠔餅,而係外面煎得香脆,中間係軟滑薯粉嘅傳統蠔烙,蠔仔味濃,水準唔錯。

相當滑溜,杏香天然。

綜合整晚食物水準,我夠胆講比好多名牌潮州酒家好,佢地嘅濃湯潮州翅,絶對值得Encore 再Encore。
