To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 蛇王芬是中環傳統老店,客人老中青三代都有,亦有很多遊客專誠到來。我曾見過一外籍遊客,乘船來港,特地來吃一碗蛇羹,還吃得津津有味。來此店,蛇羮是必吃。蛇羹配一碟乾檸檬葉絲和薄脆,真的可增添風味和層次。但蛇還是秋冬時較肥美,所以冬天吃會較佳。蛇王芬的蛇羮,刀功極細,看到師傅的功力。膶腸亦是我的至愛,配雞飯,再加薑茸,已是很滿足的一餐。這兒的膶腸是脆皮的,也可買回家自己烹調,方法是先烚、風乾、再蒸,減了肥膩,亦令外皮脆口。是次心血來潮,想吃學生時代常吃的粟米班塊飯,但失望而回。魚塊炸得不夠香脆,不及格。燉湯亦非常可靠,但整體價錢不平。這裡的裝修是老店格局,員工亦是年紀較大,跑馬日必收看賽馬台。也是特色之一啊!老闆娘和太子女常座鎮,還可在此購買她的書和取親筆簽名。
