To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 之前上班時經過,都有留意到這間位於柏庭坊的日本餐廳。最近約了舊同學在上環見面,於是帶了舊同學來「尚善」吃晚餐。餐廳食物的種類繁多,包括刺身、壽司、天婦羅、和風料理等。一行二人,眼闊肚窄,但又想多試幾種款式,於是點了套餐。前菜已經相當有驚喜,賣相精緻,各有千秋。前菜共有五款,由左至右分別是:雜菌八幡雞卷、飛龍頭、柿乾蘿蔔漬伴吞拿魚、泡菜魷魚、魚肝海膽豆腐。最有驚喜的是飛龍頭,類似魚蛋般彈牙的口感,又有鮮甜的味道。魚肝海膽豆腐亦同樣出色,豆腐非常軟滑,慢慢滲出海膽香味。鮑魚蝦冬菇清湯配搭簡單但味道清甜,蝦肉和鮑魚同樣彈牙。刺身非常豐富,有海膽、鮑魚、帶子、吞拿魚腩等等。每款刺身都是厚切,非常新鮮。炸物包括炸蠔、蝦、松葉蟹鉗、蓮藕片和菇。炸物的精髓在於粉漿,餐廳用的粉漿調校恰當,炸物外皮薄而香脆,成功鎖住海鮮的水份而沒有油膩感,非常不錯!A5和牛肉丸拌紅酒梅燴牛尾肉丸味道香濃,牛尾煮得非常入味軟熟,加上酸酸甜甜的紅酒番茄汁,非常開胃。什菜築前煮配燒黃魚黃魚燒得外脆內軟,魚肉鮮甜多汁。姬松茸銀杏蟹肉飯本身非常喜歡姬松茸的香味,再加上啖啖的蟹肉混合而吃,配搭得非常好。士多啤梨奶凍伴蜜瓜看到北海道
