We pick the Shinko's trio donburi and a gyutan don (grilled ox tongue bowl) to share, as it's buy one get one free! The trio donburi has three types of sashimi: uni sea urchin, ikura salmon roes, and tuna mash with spring onions. Very fresh ingredients, especially the creamy sweet uni! The sushi soy sauce has high quality and goes so well with the sashimi!
The gyutan don is covered with slices of grilled pre-marinated ox tongue, and is served with raw egg yolk and white leek. Very well-cured gyutan in thick cuts, with a drier texture than its usual form, almost felt like the meat has been dry aged.
Set lunch comes with an impressive crab meat and crab roes salad, miso soup, and an appetiser. Today we have tiny ox tongue dices in yuzu ponzu.
The Kyushu menu is limited edition, I wanted to try the sea eel siu mai, but it’s already sold out! We switch to the Miyazaki wagyu burger patty instead, which was juicy and served with onions and asparagus. The patty is even crispy on its edges.
