老巴剎廚房搬了店,新址在灣仔交加里。新店裝修簡單,沒裝潢可言,位置亦隱蔽,但卻座無虛席,當中不少是名人明星。點了豉油皇獅頭鵝鵝腸、蘿蔔磞沙腩、馬來凍鮮魷、紅炆龍躉翅、酒糟鵝肝、肉骨茶、海南雞飯、荔枝雪葩,六位每位$640。 雖不便宜,但亦物有所值。頭盤酒糟鵝肝,酒香肝滑,伴食的餅乾十分鬆脆,懶理膽固醇,聽不住添食;馬來凍鮮魷,超大只,煮得剛好,又鮮又爽;鵝腸夠大夠肥,豉油很和味;紅炆龍躉翅最讚,食時外脆內嫩,汁芡味道剛好,不像一般粵菜大芡的做法;肉骨茶清香,油炸鬼脆;海南雞飯雞十分嫩滑,飯用香料煮,很香;崩砂腩煲最愛是蘿蔔,原來他們只用蘿蔔芯位置做,又嫩又甜;最後點了荔枝雪葩,荔枝清甜,不會膩。這裡食品質素高,大廚亦很好客,不時出來打招呼及介紹菜的特色。值得推介!
