超級醬汁沙律吧

沙律吧配料有近30款:羅馬生菜、紅椰菜、翡翠苗、黑橄欖、雞心豆、紅菜頭、煙肉碎……真係記唔晒咁多,令小弟最深刻係竟然有成8款醬汁
:千島、凱撒……大路嘅唔講,較特別有芒果醬汁、藍芝士沙律汁、芥茉籽沙律汁、陳年黑醋沙律汁……等等。揀好多款沙律菜、車厘茄、紅腰豆、黑橄欖、雞心豆、紅菜頭、芝士粉後,主打配上3款醬:芒果醬汁、藍芝士沙律汁、芥茉籽沙律汁。各項沙律配料幾鮮爽,由於所以配料都係以小筒冰鎮住,流量快又夠凍,好似沙律菜咁,咬落「索索聲」,而3款醬汁真係各有千秋,芒果醬汁芒果味勁濃鮮活,藍芝士沙律汁鹹香濃郁,而芥茉籽沙律汁微辣醒神
。淨食沙律可能有啲「寡」,所以有時我會配冷盤,如肉腸、煙三文;但有時又會配海鮮,為一試今晚主題,就揀配海鮮。

海鮮地帶

海鮮有阿拉斯加蟹腳、凍花蟹、凍甜蝦、青口、藍貝青口、翡翠螺、瀨尿蝦,陣容都唔弱,不過質素有啲參差
。阿拉斯加蟹腳拆出啖啖肉,不過一隻鹹鮮,肉質甜美,但另一隻出現肉質「霉霉哋」嘅情況;凍花蟹、瀨尿蝦嫌煩就無試喇,甜蝦就幾唔錯,雖然唔係超爽彈,但蝦味鮮甜。如何有生蠔嘅話,可能會對海鮮一環搶攻啲!

咯嗲雙子星

分別係龍蝦蟹子釀芒果、鮮蝦配熱情果沙沙醬,係是晚招牌推介,放晌冷盤附近,以雞尾酒杯一杯一杯擺出嚟,而且賣相做得幾精緻
。前者係龍蝦、蟹子、芒果、青瓜絲嘅組合,龍蝦肉唔多,芒果變咗係主角,果味帶微酸,夏日醒胃小食;後者較得我歡心,鮮蝦肉起雙飛,配上熱情果、芒果粒粒做嘅醬,底下墊有紅色、黃色車厘茄,味道清新

飲碗湯食個包
一輪沙律、海鮮、前菜,係時候餐湯餐包環節。御花園提供兩款餐湯:龍蝦湯、鱆魚蓮藕煲唐排,打個煲蓋,中湯湯面泛出點點油光,所以就揀飲西湯。龍蝦湯味道幾濃郁,質感柔滑,想食點龍蝦肉就要撈撈底喇,水準唔錯。餐湯側邊就係小型麵包櫃,放有6-7款迷你個裝包,不過麻麻哋。除了以麵包伴湯,仲搵嚟主廚推介嘅煙肉焗生蠔及帶子,同埋煎鵝肝多士,生蠔就比較細隻咗,但大大隻帶子頗有睇頭,以煙肉、芝士烤焗,自然滋味啦;而鵝肝多士加點陳醋,唔單只無咁漏,仲多份醇香。

味遊英倫
跟住就試一試加映分題「味遊英倫」,分別有燒牛肉配約克布甸、威靈頓牛扒、甘筍牛柳、煙肉焗生蠔、英式牛肉牛腰批、愛爾蘭燉什燴、薯蓉肉醬批、炸魚伴薯條,輪流登場,全部名牌以彩色米字旗為底紙,好易認出邊啲係英倫菜式。煙肉焗生蠔上一碟食咗,今回就揀咗後四者,竟然最好食係炸魚伴薯條,不愧最英式地道美食;而薯蓉肉醬批因為過鹹,所以最唔好食
。還有,加多一小份主廚推介嘅招牌菜酥皮焗三文魚,三文魚加菠菜蓉包酥皮焗,外層酥皮自然香脆,內裡三文魚油潤肉嫩,菠菜蓉增添味道層次,加點自家配製香草醬汁,值得一試嘅菜式

因為仲要留肚晌自助餐必食嘅甜品,走向我嘅不甜無歸之路,所以幾款招牌嘢如火焰壽司、中東烤肉串、印度天多里烤肉就無試,其他墊肚嘢如即煮粉麵就更不用多提。

火焰雪山騷

招牌甜品火焰雪山同即製梳乎厘,豈會錯過。首先登場係火焰雪山,酒店為隆重其事,特別為我哋預備咗個火焰雪山即席表演,淋上冧酒,點火,誘出藍藍火光,可惜現場環境比較光,「火焰」效果大打折扣,依家嘢都係最好晌啲浪漫氣氛嘅餐廳,昏昏暗下搞就最有睇頭
。舊時啲人叫依個甜品做「焗雪山」,老派嘢,中間仲會用紅黑白三色雪糕,今晚依個就以雲喱拿雪糕做心,包海綿蛋糕。有人問做法係點,究竟點樣整完個火焰雪山啲雪糕仲可以咁凍?外面層蛋白係咪要焗一焗?當時就乜都唔記得晒喇,但睇番小弟晌十多年前晌工聯會學過嘅講義,先記番起係以海綿蛋糕墊底,圍邊,加雪糕,再以海綿蛋糕冚番個面,咁就變成海綿蛋糕包實啲雪糕,不過竅妙係做好依個工序後要入雪櫃雪硬,等到有落單,先拎出嚟晌外層唧上已打起嘅蛋白,再入爐以大面火(唔要底火)焗到蛋白金黃上色就可以出爐,所以食起嚟蛋白香脆,海綿蛋糕回軟,雪糕仍要冰凍,又好有酒香!係一道好有心思嘅甜品

即製梳乎厘
有多款口味,有薑味、檸檬味,都係口感輕盈嘅甜品,而酒店又特別做咗一款別注版,香蕉朱古力梳乎厘,因為係以香蕉果肉做,唔係靠香精,香蕉味很濃郁,內裡又有點點朱古力粒,不過,代價係整個梳乎厘成份變得重身,無咗梳乎厘嗰重輕盈質感
,放唔得耐就已經塌番落嚟,而且口感較濕潤,變得似香蕉蛋糕多過梳乎厘。

搶手法式馬卡龍(杏仁餅)

非常搶手,我晏咗去,已經睇到所餘無幾,有幸試到多款口味都係多謝對坐嘅另一位食家。酒店本身設有餅店,臨走所見一粒馬卡龍標價$18
,數數手指我都前前後後食咗6粒,都成舊水喇
!原本小弟無機會食咁多,同枱另外3位食家對太甜嘅嘢都受不了,我依啲嗜甜鬼見愁,無有怕喎,加上馬卡龍黏黏濕濕嘅口感,又唔係個個人都啱,造就小弟多啲嚟就密啲手!杏仁餅味道幾多元化,有朱古力、開心果、腰果、紅桑子、榛子、綠茶……一下子都記唔得晒。

搶灘咗3款甜品,食番啲雪糕同生果間一間場,雪糕係Dreyer’s,共有四款味道,朱古力碎碎(名牌搞錯係薄荷朱古力)、杏仁、雲呢拿、士多啤梨,揀嚟3球,加埋杏仁片、朱古力針大手入貨,再配雪米糍、蜜瓜、鮮菠蘿,淋上朱古力漿,加幾片芝士,係一個頗別出心裁嘅組合。

甜品拼盤大放送

作為最後衝刺,一份私已甜品大拼盤走唔甩!其實整晚嘅甜品款式輪流出場,臨尾有啲無再出都試唔到。不過,一口氣都揀咗8款甜品,有芒果布甸、朱古力蛋糕、木糠蛋糕、芒果拿破崙、桂花糕、斑尼士(有人嫌硬,其實佢質感本身就係較挺實)、黑加侖子啫喱(緬懷兒時味道)、蜜瓜奶凍,整體不俗。只係可惜有個主廚推介嘅香蕉朱古力卷,都無機會試,仲有綠茶紅豆蛋糕、焦糖吉士蛋糕……等等

綜觀整晚食物,有高有低,主題海鮮方面,有啲失望,英倫美食好壞參半,而招牌菜式,偶有驚喜。其實依家食餐自助晚餐真係唔平,閒閒哋動輒四、五百落樓。依家御花園做緊成人價$408(一至四)、$438(五六日及公眾假),加埋一都咪話唔貴,不過獅子銀行嘅信用卡做緊65折,平日計變咗三百頭,還算係有啲吸引度。
