中環街市的食肆, 很快又換了新一批, 這一家主打台灣麵食和飯食的餐廳, 價錢當然是中環價, 一碗牛肉拌麵連飲品接近一百元, 份量還可以. 麻辣風味也是我的喜好, 其麻辣以辣為主, 略嫌欠了花椒的麻香. 牛肉以牛𦟌肉為主, 出奇地煮得軟淋, 甚至可以說是一夾即散, 比起傳統的爽實有所不同, 牛筋同樣煮得相當軟糯, 反而麵條煮得爽實, 與前兩者起來對比度高. 平心而論做得不差, 至於服務, 在Food Court有送餐服務我覺得已能接受. I particularly enjoy the spicy and numbing flavor, although the spiciness is more prominent than the numbing sensation of Sichuan peppercorns. The beef used is mainly tenderloin and surprisingly cooked to a very tender and delicate texture, almost falling apart with a gentle touch. It differs from the traditional chewy texture in a positive way. The beef tendons are also cooked to a soft and sticky consistency. On the other hand, the noodles have a satisfying firmness, creating a nice contrast with the beef. All in all, it's a good dish. As for the service, I find the delivery service available in the Food Court to be acceptable.
