To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

今天是我親愛的車爸爸正日生日,這天我們當然亦有慶祝活動,早在上星期幾條啦好友已經一起在和昌潮味館跟他吃了慶祝晚飯,大伙兒一於以潮味慶生辰。潮州打冷給我感覺從來也很麻甩,但和昌潮味館一改潮州大排檔的味道,改用簡約典雅的裝潢打造成脫俗的潮州菜館。甫坐下侍應即送上久違了的功夫茶,從來喜歡喝功夫茶甘醇滋味很舒心。喝過功夫茶後見到店家有自製的烏豆水及老藥桔,兩款也非常吸引弄得我好糾結啊!烏豆內含豐富的蛋白質及多種礦物質和微量元素,還是美容、養生、減肥的恩物喔!所以肥美的我最終選了烏豆水$36,呷一口豆香滿盈而且還不太甜好味道,車爸爸則喝老藥桔$36用潮州特產老藥桔製成,味道鹹中帶上甘甜據聞還有潤肺健脾之效呢。幾條冷聚會的日子當然少不了美酒!碰過杯後我們便開始這夜的潮味晚餐。有美酒當然要有佐酒小吃吧!我們分別點了滷水鵝掌$66/2隻、鵝翼$70/2隻,前者弄得入味可口,後者我覺得可以再入味及軟淋些。另外這個滷水鮮墨魚$158口感彈牙味道鮮甜,還有外皮煙韌內裏嫩滑的潮州豆腐!58味道也十分不錯。吃過滷水前菜後隨即上檯的是清燉荷包鱔$98/位,潮州菜中的俵俵者清燉荷包鱔做法繁複坊間已很難吃得到,這夜有

以鹹酸菜葉將去了骨的白鱔包紮其中然後再以胡椒燉煮,雖然粗心大意的廚子未起好幼骨,但出來那口清鮮的湯才是主角啊!

潮式炒薄殼$168雖然已接近水尾但仍是很肥美的時候,簡單但最匹配當然用九層塔炒製,薄殼跟九層塔的香味天然融合加上鮮味絕對值得細意品嚐。

接下來這客失傳釀鴛鴦蟹$788真心教我讚嘆,兩大隻一仔一女的靚蟹是來自潮州所以想吃記得預訂,做法同樣繁複將蟹蓋內的羔挖出,然後加入豬肉等其他材料再釀回蟹蓋中,味道和口感也比光吃蟹羔來得更吸引,而蟹肉則非常非常清甜真的超吸引。

超薄的炸漿緊緊貼著雞皮吃下如薯片般香脆,雞肉咬下富彈性肉香亦不俗,那糯米混入了栗子、雞肝等一起烹煮,口感軟糯味道甘香好銷魂呢!!
