平時我好鍾意食魚、海產所以日本Omakase完全係我杯茶🍵不過我本身淨係鍾意食白身魚,一啲比較濃味嘅魚我實Say No‼️不過今日我反而對濃味魚有改觀喎呢間廚師發板比到新鮮感我先嚟前菜,呢個前菜好有華麗感好似一幅山水畫日本水雲+榮螺+白粟米+海老「赤崎珍蠔」師傅已經幫我加左少少檸檬汁,食其鮮味呢款蠔係而家當造!海水味偏重,蠔味濃郁,肉質肥美爽口「北海道白海膽杯」海膽份量一啲都唔吝嗇入口甘香鮮甜,甘香味係口腔內盤旋好回味‼️「北海道甜蝦x白蝦」一次過可以食咁甜蝦嘅爽甜+白蝦細綿黏口嘅口感各有獨的嘅鮮甜味,令味蕾有衝擊渡蟹餅日本白桃做左個topping,下面係烏魚子&渡蟹肉,連埋一齊食,個人覺得有啲唔夾烏魚子同蟹肉味道好香,呢2樣一齊食好match但再加埋有甜味嘅白桃就總是格格不入…….「帆立貝壽司」加左煮熟左嘅紫海膽,鮮味倍增呢度嘅鮮魚用左「熟成法」處理,咁樣可以令魚嘅鮮味更提升1️⃣真鯛 - 熟成一星期口感比新鮮的無咁實~~實中帶軟,係我鍾意嘅口感而且鮮味更突出!2️⃣竹筴魚師傅先火炙外皮,食落有啲魚乾嘅香口3️⃣ 赤身醬油漬 - 熟成20日經過熟成後,口感比平時食更軟滑魚油脂嘅甘香味更濃郁!4️⃣ 米糠

日本白桃做左個topping,
下面係烏魚子&渡蟹肉,連埋一齊食,個人覺得有啲唔夾

烏魚子同蟹肉味道好香,呢2樣一齊食好match

但再加埋有甜味嘅白桃就總是格格不入…….

口感比新鮮的無咁實~~
實中帶軟,係我鍾意嘅口感

而且鮮味更突出!

2️⃣竹筴魚
師傅先火炙外皮,食落有啲魚乾嘅香口


3️⃣ 赤身醬油漬 - 熟成20日
經過熟成後,口感比平時食更軟滑

魚油脂嘅甘香味更濃郁!

4️⃣ 米糠鯖魚
鯖魚係我比較抗拒嘅魚

每次食都一定要加大量蔥+薑,
但今日師傅只係加少少醬油就食得

完全無魚腥味❤️口感又無咁實,很不錯!

5️⃣ 燒鰹魚
鰹魚又係一種好濃味嘅魚……
不過用咗熟成法,味道、口感就截然不同

好鍾意食呢種甘香味


「鮮魚熟成法」真係有另一風味嘅味道

結尾嘅甜品+烘焙綠茶🍵都非常有驚喜!
🍮紫薯糕甜品有好香紫薯味,完全係真材實料,
中間有一絲絲的紫薯絲
