Michelin ⭐️Arcane 中環安蘭街一帶收藏了不少米芝蓮星。這次來到#米芝蓮一星 意大利菜Arcane,店面小小,但平日中午來吃3-courses lunch的人倒很多,老闆及主廚Shane Osborn來頭也不少,是Netflix廚藝比賽節目final table的亞軍,也是上次分享過中環Cornerstone的老闆。酸種麵包(7.5/10): 外皮烘得硬脆,內裡卻很柔軟的sourdough,襯著salted butter吃很不錯。Japanese Baby Aubergines w/ yoghurt and chimichurri (8.75/10) 出色的廚藝,就是令不吃茄子的我也驚為天人。日本小茄子,配乳酪醬和阿根廷青醬,把茄子的草青味全辟了,剩下的只是啖啖柔軟幼滑和清新鮮味。Steamed taiyouran w/ a ragout of white bean, haricot vert, Moreau sausage (7.25/10)日本太陽卵配豆角豆蓉火腿粒,味道不錯,可意料之內,但感覺很「早餐」,米芝蓮一星前菜來說太缺乏驚喜。Roasted Iberico P

Roasted Iberico Pork presa (8.5/10)
伊比利亞黑毛豬的豬頸肉部分,肉質彈牙有油香。值得一提的是,粟米醬料及粟米非常清甜,配上燒汁味道很夾,既清新又惹味。
