每次到台灣旅行後總會對台式料理念念不忘,在香港找間台式餐廳實在是易如反掌,但口味正宗的卻是寥寥無幾。程班長雖隱身於荔枝角一棟工業大廈內,但人氣一直居高不下,由台灣人主理,口碑載道,價錢亦相當親民。滷牛筋 ($32)牛筋滷得軟滑入味,不過醬汁偏鹹而且比較油膩。滷水綜合盤 ($28)綜合盤可以從海帶、米血糕、滷蛋、甜不辣、豆乾、豬耳和百頁豆腐中任選三款,而我則選了海帶、甜不辣及豬耳,海帶和豬耳口感爽脆而甜不辣則煙韌彈牙,同樣入味不過與牛筋一樣較油膩。蚵仔煎 ($36)每次來到亦定必會點一份蚵仔煎,口感煙韌之餘邊位略帶焦脆,而且蚵仔份量十足,肉身飽滿鮮美,比在台灣當地夜市品嚐到的蚵仔煎更加出色。豆乳雞 ($32)豆乳雞上桌時經已香氣四溢,粉漿厚薄適中,鹹鹹香香,炸得外酥內軟而肉質亦不算乾韌。玉米起司蛋捲餅 ($36)酥皮餅皮類似手抓餅一樣鬆脆,厚實當中帶點煙韌,中間夾著煎蛋、粟米和芝士,蛋香特別出眾。清燉牛肉麵 ($53)牛肉麵分為清燉和紅燒兩款湯底,清燉湯底據稱是以牛骨熬製近十小時,形成一層骨髓精華的油分,入口帶淡淡藥材香,但對我而言的確過份油膩。麵條質感煙韌彈牙,而牛肉亦煮得香軟鬆化。魯

「物無定味,適口者珍。」總不能一概而論,只是部分菜式對我而言的確不太合口味,但這裡台灣料理無可否認風味十足,而且用心經營和烹調食物方面亦是有目共睹。
