鐵罐酒蒸岩蠔 ($198) 是一道既可觀賞製作過程又可細味的佳餚。方型的鐵罐內,注滿誘人的清酒。火鎗靠近的一刻,火舌𣊬間湧現。把握這個澎湃的時刻,店員把大隻肥美的生蠔放進鐵罐中浸煮。為確保烹煮時間恰到好處,火爐旁邊擺放了一個小沙漏作計時之用。剛熟透的生蠔仍保飽滿的型態,口感滑溜細嫩,蠔鮮味道濃郁。雖然生蠔曾置於酒中焗煮,但留下的酒香不算明顯,或許是生蠔本身太重味吧!

赤目魚 (季節活魚) 是貴價深海魚,擁有大眼紅身。從其晶瑩剔透的眼睛已可看出食材的鮮度,以刺身做法去展現食材的原汁原味最好不過。廚師以嫻熟的刀工把活魚起肉𠝹花,並刻意以火鎗炙面以添香氣。視乎魚肉的部位,近背位置口感爽實,近腩位置則較軟嫩。相比一般白身魚,赤目魚的魚香出眾穩實,是很好的刺身選材。

大大隻的帶子產自日本北海道,依照店員推介以浜燒手法處理。因帶子選材同樣屬刺身級別,所以不用煮至熟透也可安心食用,帶子的軟嫩感亦更易控制。醬料方面,可從清酒或黑松露牛油當中二擇其一。清酒能引領出帶子的鮮甜原味;黑松露牛油則旨在搶口,對於正在品酒的食友尤其合適。

赤蝦體型大隻,不論刺身或浜燒處理也討人喜愛。不過,既然之前已試過刺身及浜燒,這次不如加點新意,以天婦羅型式製作這三只赤蝦。透過透徹的油炸,不單外脆內彈的蝦身能夠食用,連帶帶羔的蝦頭也能連殼吃盡,沒有半點浪費!

蟹腳用於煮粥,蟹蓋蟹羔總不能浪費。味噌蟹甲羅燒 ($156) 這道菜正好用以填補這個空隙。以蟹羔蛋黃作主打食材的甲羅燒,絕對是令人又愛又恨的邪惡之物,愛其搶味甘香,恨其與健康對着幹!少吃滋味,一份甲羅燒二人共享其實剛好,現在一人一只實在有點膩!

是晚在磯野水產盡情享受了多款海鮮美食。一份磯野海鮮盛合,雖然只建議供二人共享,但就算三人同行也足夠帶來豐實的滿足感。加上極具彈性的自選烹調安排,也是值得加分的地方。喜愛細味海鮮的朋友,值得前來試試!
