在餐廳臨立的蘇豪區,晚上人潮如織,既有時尚熱鬧的酒吧,亦有雅緻浪漫的西餐廳。是晚造訪的 Bistronomique,正屬於後者。餐廳分上下兩層,是一貫法國西餐廳的風格。店內有多幅不同電影的海報掛畫,亦是此店的特色之一。安座後先挑美酒飲料,簡單一杯 House White,果香酸感比較重,酒質薄身,味道平易近人。麵包籃亦隨美酒同時送來。兩個款式不同的小麵包,食味普通無乜特別,勝在包身暖暖,在寒冷的天氣下顯得尤其吸引。頭盤前後選了三款,先吃健康清新的 Heirloom tomato salad with honey balsamico and basil。Heirloom tomato 泛指特別配種的蕃茄,色澤表徵多變。今次入饌的蕃茄有紅中帶綠及純黃兩色,質感普遍比一般蕃茄結實,汁量甜度皆中等。Avocado crab tian in gazpacho 同樣是冷盤,以蟹肉、蝦肉、蟹籽及牛油果製作,並澆上 gazpacho 作醬汁。這道小品既有蟹肉的甜,又有蝦肉的爽,更有蟹籽的脆,再配上牛油果的綿滑及 gazpacho 汁的微辣感,口感味道多變。Escargot "bourguignon"

Escargot "bourguignon" 是一道頗經典的菜式,田螺選材較軟身,香草醬汁入味。在田螺的下方,放了一層薯蓉。這種薯蓉在往後多款菜餚皆可見,以牛油拌勻焗香,甚為細滑香口!

另一主菜 Australia Wagyu beef cheek "bourguignon",以低溫慢煮方式烹煮和牛,整件牛面脥受火平均,口感鬆軟,而且膠質相當豐富。二人分享份量剛好,一人獨享膩感則重一點。

Caramelized apple tarte tatin 又是一道經典法式甜品,以焦糖煮製蘋果,再置於酥脆的餅底焗製,食味甜爽。外加一球香草雪糕,一冷一熱感覺豐富。就改善建議而言,可考慮添上一些伴碟襯飾以增加甜品的美感。

另一道甜品 Coconut mango caramel cake,不約而同都以焦糖作主要食材,芒果與焦糖對碰,焦糖味道明顯佔優,雖然感覺上有點失重,但那份焦糖味道又確實幾好味。在慕絲蛋糕當中,夾上一層白白的椰絲,雖然口感味道確實更豐富,但同時間慕絲蛋糕的滑感則會變得弱一點。相比上一道甜品,就是這少少的劃花襯飾成功使甜品外觀看起來更吸引!
