To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 水雲酸爽又順滑食完好開胃🌿而黑松露蒸蛋好幼滑🥚而黑松露香得嚟又唔會搶過蛋味,平衡得好好


刺身
赤貝切到好似朵花咁綻放開嚟好別致🌺 仙鳳趾生蠔夠爽滑,表面仲加上金萡點綴✨深海池魚用上柚子胡椒調味,仲有背同腩2個部位,夠晒層次感🐟松葉蟹好鮮甜,而且仲可以配旁邊嘅紫蘇花同食用菊花一齊食🦀

魚肉好軟嫩,將筷子插中間就可以將魚肉分離🐟亦好入味,帶出魚肉鮮味同時增添一種甜味


壽司(一)
根據壽司拎法我將佢分成兩部分🤣四件壽司分別係白海膽墨魚、伊佐木雞魚、腦天同中拖羅🍣
比較深印象係雞魚同腦天🌟雞魚用湯霜法令魚皮變軟,而且配料例如萬能葱係放係魚肉內側,令第一口感係食到魚嘅鮮味,然後配料嘅味道再慢慢散發出嚟;而腦天係吞拿魚天靈蓋,十分罕有,師傅會用火槍燒融啲筋,所以入口即化,充滿魚香


壽司(二)
要拎上手就知幾有分量🤣分別係鰈魚裙邊、甜蝦、蛇腹拖羅同醬油漬帶子磯邊卷🍣
帶子係師傅由我哋入餐廳就開始做醬油漬,有充足時間俾佢入味得嚟又唔會太咸,火炙後軟熟又帶有醬油嘅甜味;蛇腹拖羅係魚鮮味最飽滿,油脂味最香濃嘅部位,見到佢粉嫩嘅色澤已經好有食慾,加入葱漬同芝麻汁後香氣撲鼻同時減低油膩感,好滿足~


✅海膽丼
師傅舀海膽同魚子起嚟真係好大方唔留手🤣個飯係完全比海膽同魚籽覆蓋住🤤而且坐喺上面灑上金箔同紫蘇花,賣相吸引又氣派✨


✅柚子檸檬果凍
特別想提吓呢款甜品,呢兩款水果整成嘅甜品酸爽又清新,而且上面再灑上用柑子皮磨成嘅粉,帶淡淡苦澀味但好好refresh味蕾同平衡油膩感,揀得好好👍🏻
