全球都有新冠疫情,各國都封城,本身喜愛旅遊的我,只有留港四圍食吓野,中午去尖沙咀買嘢,比我發現有間鮨白鳥,主打廚師發辦,由熊本出身的大廚原田誠先生主理。見到餐牌午市時段設有不同壽司料理及海鮮丼飯定食套餐,選擇包括「豪華刺身定食」丶「壽司定食」丶「鮨白鳥海師丼」丶「和王海膽丼」及「大間鮪魚丼」等,一於入去試試!餐廳以木為主的裝修擺設,頗有日本風格。我就點了壽司定食,茶碗蒸有京都風味味道比較濃郁。京蔥帆立貝加咗魚籽和醋麵豉醬,開胃菜。吉備奈子魚壽司,吉備奈子是九州魚,味道比較清淡,口感林滑。壽司飯採用熊本日光米,內梗外軟空氣感重,飯已加入醬油調味,並加咗少許Wasabi,已經好夠味,所以不用再點醬油。鯖魚壽司鹹鹹地有有抽子味道。針魚壽司魚味略淡但帶優厚油脂,魚肉比較爽口。赤身吞拿魚壽司,魚肉呈赤紅色故名之,肉質鮮嫩而結實,極小脂肪。竹籤魚肉質是軟身,師父用火槍將竹籤魚的外皮燒得香噴噴,食落有炙燒的魚香味。深海池魚,師傅做咗煙燻的味道,肉質鮮嫩肥美,脂厚油香,入口魚油甘香細膩,爽口帶煙燻香味。牡丹蝦,蝦肉肥碩,鮮甜爽口。吞拿魚蓉卷,吞拿魚蓉口感嫩滑、綿軟,油脂香味濃厚。味噌湯鮮味,甜品係綠茶
