新濠影滙》的粵菜廳「玥龍軒」,是米芝蓮二星中菜「譽瓏軒」的姊妹店, 由米芝蓮名廚譚國鋒師傅主理,出品已有信心。 價值連城的茂台,最貴那支要廿多萬,開一支少一支:茶壺甚有心思,將龍上茶杯的位置轉動,就可以選焗茶或倒茶:先來餐前小吃:「玥龍拼盤 - 芥末子南非鮮鮑 / 百花乳豬」,南非鮑帶來開胃香辛。乳豬一小件,皮與肉中間釀入蝦膠再炸,難度甚高。「瑪卡燉竹絲雞」,瑪卡是來自秘魯的植物,能提高抗氧化能力、抗疲勞、舒緩焦慮、增強記憶力等等,是很有益的食材,湯鮮。「古法蒸斑球伴椒鹽頭腩」,一魚兩吃。蒸斑球伴金華火腿絲和用滾油溓過的薑蔥絲,吸收魚肉精華的甜豉油,用來撈飯最好。「無花果和牛脯」,軟嫩:「濃湯鮮竹紫淮山泡龍鬚菜」,嫩綠南瓜苗用湯浸熟,上湯味道我最欣賞,可以把它喝得光光。「極品玥龍軒炒飯」,由師傅用砂煲即場堂炒。飯粒炒得分明,用頭抽的鮮提香,如清秀少女化上淡妝,恰到好處。「川貝雪蓮子燉蘋果」,蘋果已燉至半溶化,乾燥天氣來碗,滋潤。最後中式的 Petit Four:好一個味覺享受,相受能摘星,指日可待。
