如果要總結一下多天的澳門之旅的話,麗思咖啡廳給我留下了一個非常深刻的印象,可能是麗思卡爾頓酒店一向都予人一種豪華的感覺,而旗下的餐廳也是同出一徹的豪華,萬萬想不到麗思咖啡廳的價錢會如此親民,四道菜的晚市套餐只是MOP528,實在吸引。正門設於銀河購物城的一方,接待小姐親切殷勤,旁邊更有位穿著法式風格的手提琴手在演奏,感覺美好。而另一端的大門則與酒店連著,方便酒店住客到臨。整個餐廳佔地甚大,有著一排放置了生蠔、餐酒及甜品的小酒吧,中央位置更有高身的餐枱,圍繞著餐廳四周的都是舒適的座位,而且一點也不擠迫。先來點餐包,是熱烘烘的酸種粿麥麵包,烤得外脆內軟,塗點牛油,麵粉香及酸種的味道突出,實在滋味。前菜有幾款可選,分別是【田園蔬菜沙律配法國康堤奶酪】(Garden vegetables, salad and Comte cheese)、【生牛肉卷、松露慕斯、魚籽醬及金箔】(Rolled beef carpaccio, truffle mousse, caviar and golden leave)或【皇帝蟹及煙三文魚肉餅、海鮮凍】(King crab and smoked salmon te

魚菜式可選【煎鱸魚配海鮮燉飯、蛤蜊香菜配紅花汁】(Pan seared seabass, seafood riso, saffron sauce)或【龍蝦慕斯、焗大蝦,麗絲玲酒醬】(Lobster mousse, grilled king prawns, Riesling sauce)。鱸魚煎得外皮香脆,肉質嫩滑,可是亮點卻落在海鮮燉飯,飯粒分明帶爽勁,富有豐富的海鮮香味。

相對地,龍蝦慕斯香濃得來反而更為清新,將龍蝦打成慕斯球,質感輕盈,鮮甜可口,而大蝦則爽口彈牙,那個白酒汁輕描淡寫地突顯了海鮮的清香。

肉菜式可選【布雷斯雞配羊肚菌醬,土豆泥及什錦蔬菜】(Bresse chicken with morel sauce, mashed potato and assorted
seasonal vegetables)或【火焰干邑煙肉燉牛肉卷,野生蘑菇及醃小蕃茄】(Beef tournedos in
bacon wrap, flambéed with Cognac, wild mushrooms and confit baby tomato)。看見這道菜式時,感覺不太好,吃雞不吃雞皮就好像缺少了什麼似的,而且肉也會偏乾的,幸好肉質尚好,配上惹味的羊肚菌醬,頓時變得不錯。

又來到小弟最愛的牛肉了,這份牛肉的精髓在於圍在牛肉上的煙肉,因用上了油脂少的牛柳,脂肪不足夠,但煙肉正正起了增加油脂的效用,慢慢滲進肉中,變得甘香,也不乾身,很嫩很滑,而墊底的薯蓉亦打得幼滑,美味。

甜品有三款,其中【橙酒火焰班戟】(Crepe Suzette)是需要額外加MOP68的,而【巧克力泡芙】(Chocolate
profiteroles)及【新鮮時令水果】(Fruit salad)則不用加錢。火焰班戟是即場烹調的,侍應一個接一個步驟做出來,到最尾就會聞到香噴噴的橙香,入口帶點焦糖甜,帶點橙汁的酸香,視覺與味道並存。

其實餐廳差不多每天也有不同的推廣,是晚正碰巧是小弟喜愛的「Steak Frites Night」,供應了不少牛扒組合,有【US Prime beef tenderloin】、【US Prime ribeye】及【Australian wagyu M6 rireye】幾款。身為牛魔皇的小弟對這塊US Prime grade的肉眼扒,烤得微微焦香,配合邪惡滿瀉的牛骨髓,兩者一起吃,令人忘不了那份滋味。

最後,店方所供應的甜品還有賣相精緻的生果批,款式也不少,有士多啤梨、藍莓及無花果,真是美味。
