想整番味簡單的家常小菜,但又想賣相好睇,令人食慾大開,這味三素豆腐絕對要推薦給大家。
Ingredient and Portion
(一)豆腐三塊
(二)絲瓜一條(約二、三兩重)
(三)鮮草菇一罐
(四)蕃茄一個
(五)油鑊
Seasoning
草菇調味:
(一)羌汁二茶匙
(二)糖1/8 茶匙
(三)生抽一湯羹

味汁:
(一)油一湯羹
(二)紹酒一湯羹
(三)生抽二湯羹
(四)冬菇水四湯羹
(五)糖1/2 茶匙
(六)老抽二茶匙
(七)麻油1/2 茶匙

埋獻:
(一)生粉1 1/2 茶匙,開水五湯羹
Method
(一)草菇泌乾水份,加入調味醃十分鐘。

(二)鑊燒熱,加入油,待油起煙,將豆腐一切四投入,炸至黃色,即撈起備用。

(三)絲瓜斜切成菱形,蕃茄切成如柑塊,燒熱油一湯羹,加紹酒,即將絲瓜及蕃茄加入兜一兜,加入炸好之豆腐炒勻,倒入味汁,最後用生粉水埋獻,上碟,用芫茜點綴。
