自家製义燒餐包剛出爐鬆軟美味

餡料:
义燒 1條
洋蔥(細)1個
蠔油 2湯匙
糖 1湯匙
生粉 1茶匙(加水開稀)

麵包料:
高筋粉 280g
奶 80ml
水 80ml
鹽 3g
依士 3g
糖 25g
室溫牛油 20g
蛋黃 1隻
Seasoning
蠔油 2湯匙
糖 1湯匙
生粉 1茶匙(加水開稀)
Method
1.先將洋蔥及义燒切粒,再下鑊爆香洋蔥,加入义燒,再加入蠔油及糖同炒片刻,最後用生粉水埋茨,盛起備用
2.將依士加入水內,連同其他材料攪拌(除牛油)
3.將麵團搓好,再慢慢加入牛油至起薄膜
4.將搓好既麵團放係大碗內發酵至2倍大(約60分鐘),用手沾麵粉篤下麵團,如不反彈即可
5.排氣後再分割等份,搓圓再發酵10分鐘面,反轉底部再發酵5分鐘
6.發酵後再包餡料,最後一次發酵45分鐘,搽上蛋汁於表面
7.放入焗爐用180度烤12分鐘
Tips
1.一般搓包都係15分鐘內要完成
2.大家既爐火唔同最好自己睇住比較易掌握時間
