乾炒牛河通常於茶餐廳享用,但有沒有試過於家中親手製作?學員們話看過「IC電磁爐.飯.堂」試煮班馮師傅的手勢後覺得比想像中簡單,不難煮製,回家後也要試一試!
Ingredient and Portion
河粉 400克
鮮牛肉片 120克
銀芽菜 120克
韭黃菜 50克
青蔥 少許
Seasoning
美極 適量
鹽 適量
糖 適量
生粉 適量
油 適量
清水 適量
Method
1.將鮮牛肉切片,用少許砂糖、美極、生粉及少量清水醃製待用
2.將電磁爐調至中溫(約180–200度),將牛肉片炒熟撈起
3.用適量油將河粉煎炒至熟透
4.加青蔥、少許銀芽菜炒至均勻
5.將牛肉片加熱炒勻,再加落韭黃菜炒透,上碟便可
Tips
電磁爐十分適合爆炒牛肉,因為電磁爐能夠保持穩定的溫度,在兜炒過程中食物可以均勻受熱,將肉汁鎖住,令肉質更嫩滑。
