如今在外吃冷烏冬,動輒數十元一客,可是店家提供的並非手打貨色。既然如此,在家自製更對口味!絕佳的夏日午餐!

讚岐烏冬 1-2 個
黑芝蔴/薑茸/蔥花 隨意
Seasoning
鰹魚汁 5湯匙
柚子醋 4湯匙
淡口醬油 3湯匙
水 2湯匙
麻油 1湯匙
Method
1.調好冷汁,放冰箱下層備用。
2.燒一鍋水,水沸後下一撮鹽,煮烏冬約1分鐘或至你滿意的韌度,撈起馬上放入冰水中,置冰箱上層冷卻3至5分鐘。
3.取出烏冬,瀝乾水分上盤,撒點黑芝蔴 / 薑茸 / 蔥花。伴冷汁享用。
Tips
1.冷汁的份量比例自由調配。不嗜酸者不下醋無妨,多添鰹魚汁和其他調味料便可。除了柚子,紫蘇梅子也是不錯的口味。
