半圓外型的咖啡慕絲蛋糕造型特別,咖啡慕絲軟滑香濃,外層的黑朱古力,薄薄脆口,難得可以在面層隨意畫上任何圖案,很受小朋友的歡迎,讓他們在吃蛋糕前自由創作一番。

Ingredient and Portion
朱古力外層:
70%黑朱古力 150g
清水 60g
牛油 50g

咖啡慕絲蛋糕:
現成海綿蛋糕 3塊(最少闊5吋)
咖啡酒 適量
咖啡粉 30g
淡忌廉 240g
魚膠粉 6g
熱水 40g
朱古力粒 20g
Method
1.將黑朱古力、清水、牛油以熱水座溶備用。
2.將海綿蛋糕分別裁成直徑3吋、4吋、5吋,厚度約為半吋的蛋糕片。
3.在蛋糕片塗上咖啡酒,只塗單面。
4.淡忌廉打起至奶昔狀,咖啡粉以10g熱水溶開,魚膠粉以30g熱水溶開,最後將三者混合拌勻。
5.以家用湯碗,先注入小部份咖啡忌廉漿,加朱古力粒,再加直徑3吋的蛋糕片(塗有咖啡酒的一面向下),用存稍稍壓實;然後再注入咖啡忌廉漿、朱古力粒、直徑4吋的蛋糕片;最後重覆步驟,以直徑5吋的蛋糕片蓋上,放入雪櫃約1小時定型。
6.取出咖啡慕絲蛋糕,淋上黑朱古力漿即成。

2.可購買白朱古力筆,讓小朋友隨意在蛋糕面上繪圖
