我係超超超鍾意澳門杏香樓既馬蹄沙,每次過去都要吃,但係香港我暫時都未搵到有另一間好味得過佢,但佢太遠喇!的起心肝自己試下煲,今次試煲,不是講笑,真的好味到不得了!大前提是你要喜歡吃馬蹄呀,真係好好味好好味架!

Ingredient and Portion
材料 :
馬蹄 1 斤
生水 1.5 公升
熟水 0.5 公升
冰糖 適量(視乎你的好甜度)
雞蛋 2 隻
馬蹄粉 1 湯匙 + 熟水 1 湯匙
Method
1. 馬蹄去皮洗淨,切成碎粒
2. 煲滾 1.5 公升清水
2. 把將雞蛋拌勻
3. 將0.5公升熟水和馬蹄放入攪拌機攪5-10秒
4. 將步驟3攪拌完後倒回煲中,以中火煲滾轉細火
5. 落適量冰糖調好適合自己甜度
6. 待冰糖完全溶解後,將馬蹄粉與熟水拌勻
7. 然後邊攪邊倒進糖水中,攪至濃稠熄火
6. 將蛋液慢慢傾入攪勻成蛋花即成
Tips
1. 如果你唔介意浪費蛋黃,可以只落蛋白,會更健康
2. 另外如屋企有椰汁,可在最後上碗時,再有上面淋上少許椰汁
3. 記得只係入攪拌5-10秒便好,我地係要沙既感覺
