日式煮南瓜

這是常常吃到的日式前菜,冷吃熱食皆宜,更可多做一點放在雪櫃可存放一星期(必須使用密封盒),用來加餸非常方便,而且材料少做法好簡單,素食者也適合呢!

(4人份)
日本南瓜 半個(約800克)
Seasoning
日本料理酒 1湯匙
砂糖 1湯匙
日本豉油 2茶匙
味醂 2茶匙
Method
1. 用匙羹刮去南瓜籽及瓜囊,切成4至5厘米大塊.
2. 將步驟(1)的南瓜塊放入18厘米平底鑊內,加一杯水煮滾。
3. 水滾後加入所有調味料,蓋上比平底鑊小但可遮蓋所有南瓜的蓋子(日本人叫這種蓋子做「落とし蓋」)或用焗爐用紙(baking paper)剪裁一個17cm直徑的圓形,在中心剪一個直徑1.5厘米的孔覆蓋所有南瓜,用較弱的中火煮10分鐘。
4. 用牙簽刺一下最厚的一件南瓜,如輕易刺穿便可熄火,再蓋上之前的小蓋或紙蓋,焗2至3分鐘便可上碟。如水份太多,可揭蓋用中火多煮一分鐘。
Tips
用較小的蓋或紙蓋是必要的技巧,因為用密封蓋煮,水份不易散發之餘南瓜很易煮爛。
