桂圓薏米薄荷凍

桂圓有寧神安睡作用、薏米則清熱利濕,製成薄荷凍,於炎熱夏天時作飯後甜品特別清涼
Ingredient and Portion
水 8碗
桂圓 10-15粒
生熟薏米 各2両
糖冬瓜 8-10粒
薄荷葉 適量
大菜絲 適量(如想省卻浸大菜絲步驟,可以魚膠粉代替)
士多啤利片 適量
Method
1.把7碗水煮滾後落薏米及糖冬瓜,以慢火煲30分鐘,下桂圓再煮20分鐘
2.薄荷葉以1碗份量的熱水焗約10分鐘,待用
3.將預先已浸發之大菜絲放入桂圓薏米水煮至溶解,熄火後將薄荷水倒入再拌勻
4.把士多啤利片預先放入容器內,將桂圓薏米水倒入,再放薄荷葉裝飾,於室溫放涼後置於雪櫃內雪凍即可食用
Tips
1.可先以手輕摔薄荷葉,令香味較易釋出
2.雪凍後甜味會稍降,如喜歡較甜者,可以多加一點糖冬瓜或待薄荷水稍涼後加入蜜糖或桂花
