用現成的燒鴨炆芋頭,慳省時間和工夫,亦可用吃剩的鴨件炆。
Ingredient and Portion
燒鴨 1隻開半
荔浦芋頭 1斤(切件)
冰糖 半杯
蠔油 少許
Seasoning
酸梅 4粒(切開)
麵豉醬 1湯匙
蒜茸 3粒
陳皮 1/2個
Method
1.把鴨的掌和翼切出,鴨尾除去。
2.少許油下蒜茸爆香,放下醬料亦爆香,加入冰糖、蠔油和水約2至3杯煮滾。
3.放入大件芋頭和整隻鴨。
4.再以文火炆1小時取出。
5.芋頭斬件上碟,再斬燒鴨排在芋頭上,將汁淋在鴨上。
Tips
炆的時間是以芋頭軟稔即可。亦可用滷水鴨,但醬料要略減半。
