這個夏天真太熱!大人小朋友食慾大減,利用鮮橙的味道、香氣、顏色應該刺激了大家的胃口吧!
Ingredient and Portion
腩排1斤半
柳橙1個
清水4中式湯匙
濃縮橙汁1中式湯匙
鹽1/8茶匙

吉士粉少許
水適量

醃料:
OK汁1中式湯匙
叉燒醬2中式湯匙
白葡萄酒1湯匙
鹽1茶匙
生粉3湯匙
生油2湯匙
Method
1. 將一條條長腩排, 斬成3件,洗淨瀝乾.
2. 起出半個橙皮, 不要內皮的白色部分, 切米粒般大小, 取部分橙肉切粒.
餘下半個橙切薄片伴碟.
3. 排骨下ok汁,叉燒醬,鹽,白葡萄酒,生粉醃1小時,醃好加生油伴好.
4. 燒紅鑊,先猛火煎排骨表面至凝固,轉慢火耐心煎至熟,盛起,徹底瀝乾油份.
5. 不銹鋼平底鑊,下橙汁、皮和橙肉粒,清水和鹽,慢火煮滾,吉士粉開水當生粉水埋獻至黏稠, 熄火加入排骨兜至上勻汁料上碟.
Tips
1. 腩排要選帶著如千層糕的肥肉的.
2. OK汁的作用是令肉帶果味.
3. 排骨好搶火,要耐心煎,或改用焗爐焗.
4. 使用生鐵爐具會令橙汁變黑.
5. 喜歡酒香的話,可加適量君度橙酒.
