Ingredient and Portion
豬扒 2塊
鷄蛋 3隻
冷飯 3碗
青紅燈籠椒 各半杯
番茄 3個
洋葱 1個
菠蘿粒 半杯
芝士 適量
Seasoning

醬油 1茶匙
料酒 半茶匙
薑汁 半茶匙
胡椒粉 少許


茄汁 4茶匙
水 1杯
栗粉 1茶匙
鹽 少許
Method
1. 把豬扒輕輕拍鬆及切斷筋位
2. 用豬扒醃料醃10分鐘後拍上麵粉,下鍋煎熟後切厚片備用
3. 用另外一個鍋落油炒香蔬菜,加入水和茄汁煮,最後加上栗粉水讓汁變濃
4. 把鷄蛋打散後加入冷飯裏面攪拌均匀,下熱鍋加少許鹽快炒
5. 把炒好的飯鋪在烤盤裏面,淋上2/3醬汁,放上豬扒,再淋上剩下的醬汁,加上大量芝士碎
6. 在200度焗爐焗到芝士變金黃色即成
Tips
1. 豬扒可以先煎8成熟,之後焗的時候會熟
2. 豬扒煎完後先靜置10分鐘再切可以讓鎖緊肉汁
