豬扒 4塊
芫荽 少許
Seasoning
蛋 1隻
盬 半茶匙
生抽 1.5茶匙
老抽 半茶匙
糖 1茶匙
生粉 1茶匙
Method
1. 先將豬扒自然解凍,印乾豬扒
2. 加入調味醃料 (次序: 盬,糖,生抽,老抽,生粉)
3. 先拂蛋,最後加入豬扒,撈勻 (這隻雞蛋就是鎖住肉汁及令豬扒鬆化的原因)
4. 醃肉最少2小時,過夜更佳
5. 首先大火下油起鑊,油滾後轉中火
6. 下豬扒,每邊煎若2-3分鐘至金黃色
7. 蓋上鑊蓋焗約1-2分鐘
8. 加上芫荽後上碟
Tips
煎豬扒時不用翻來翻去,否則更難煎熟
