葡式西洋炒蜆令人吃過翻尋味,可惜一次總吃不了那麼多
想想不如來個自家製,可以盡情吃個暢快
相信這味特色炒蜆,可以輕易得到眾人歡心
Ingredient and Portion
蜆 2斤
洋蔥 1個
乾蔥 5粒
蒜頭 3粒
芫莤 3棵
白酒 1/4瓶
上湯 少量
生粉水 少許
橄欖油 少量
Seasoning
胡椒粉 3茶匙
糖 2茶匙
鹽 少許
Method
1.用清水浸蜆一段長時間,直至沙完全吐出,取起待乾
2.將洋蔥、乾蔥、2棵芫莤切成小粒,蒜頭切片
3.用橄欖油起鑊,燒熱下洋蔥乾蔥爆香,再下蒜片
4.洋蔥粒轉金黃色就倒入蜆爆炒,加入白酒快煮
5.下調味料,試味,最後加入芫莤粒,上湯,蓋上鑊蓋收水即成
6.將剩下的芫莤切小段,灑上作點綴
Tips
1.蜆類繁多,某些較清潔不帶沙,可選喜歡的或時令的
2.白酒香氣濃郁,令味道更突出,愛酒味可增加份量
3.控制烹調時間,觀察蜆肉收縮即可上碟,保持肉質鮮嫩
4.蜆本身帶咸鮮味,故鹽份可於試味後隨個人口味加減
5.如鑊內的水份略多可加入生粉水
